Pistachio, Rose & Strawberry Buns

I came across this recipe for brioche buns filled with pistachio cream and strawberry jam and brushed with rose-flavoured syrup in the Food52 Baking Club on Facebook, where we are baking from the book “Golden” by Itamar Srulovich and Sarit Packer for the month of June. Despite not being too sure about rose-flavoured things (the last time I baked with rosewater I ended up with sugar cookies that tasted like they’d been made with old potpourri, ie: not good), after reading a few enthusiastic reviews, I decided to try them myself. All my uncertainty was for naught, because THESE – these are amazing!

Fancy Strawberry Rhubarb Pie

I’m a sucker for a beautiful pie, and especially a strawberry rhubarb one, so even though rhubarb season may be nearing an end, I had to share this pie I made a while back. I love love love rhubarb pie, and this one is a riff on Anne Dimock’s Straight-Up Rhubarb Pie as seen on Food52 – which is a damn good rhubarb pie and needs no embellishment – but when I made this one, the very first strawberries of the season were also hitting the grocery store and I couldn’t resist.

Shaker Lattice Strawberry Rhubarb Pie with Buckwheat Sourdough Pastry (Daring Bakers: Pies, Part II)

IMG_3316Rachael from pizzarossa was our lovely June 2013 Daring Bakers’ host and she had us whipping up delicious pies in our kitchens! Cream pies, fruit pies, chocolate pies, even crack pies! There’s nothing like pie! 🙂

The title of this post is a bit of a mouthful, but there’s a lot going on in this pie (which is the second pie I made for the Daring Bakers Challenge this month). There’s perfectly ripe strawberries and rhubarb, a pâté brisée crust enriched with sourdough starter and buckwheat flour, and a funky lattice pattern.

Strawberry Rhubarb Skillet Clafoutis

The move is over and we have settled into our temporary new home – temporary because (fingers crossed!) we have plans in the works for bigger, better things. I have not really taken the new kitchen for a spin yet, but I’m looking forward to it. It’s bigger and better laid-out than the kitchen in our last place, which was a galley-style layout that could only accommodate one person and had barely any usable counter space:

Strawberry Cheesecake Banana Bread

It is finally strawberry season here, and by that I mean that there are local strawberries in the stores. They are a bit more expensive than the ones trucked up from California (which seems so totally backwards!) but they taste amazing because they are so perfectly ripe and fresh.

I knew I wanted to make something special with these berries but I couldn’t decide what until I remembered the strawberry banana bread I’d seen on Joy the Baker a while ago. I wanted to jazz it up even more so I added a cream cheese swirl. The result is an incredibly moist, decadent, not-to-sweet bread with a pleasant strawberry flavour and cheesecake-y tang. The banana is not overpowering at all and mostly just contributes sweetness, and the hint of cinnamon in the batter goes really well with the strawberries….

Strawberry Rhubarb Coffee Cake with Ginger

I’ve been on a rhubarb kick lately. I bought about 4 kilograms of local rhubarb a few weeks ago and it’s now in my freezer, waiting to be used in something delicious. Seeing as the strawberry rhubarb pie I made at Easter didn’t quite satisfy my craving for slightly tart rhubarb-y goodness, I decided to make a coffee cake instead. This is based on a recipe that I’ve had in my little recipe notebook since high school – I think it is from making goodies for the concession at a school concert or something, but I have no idea of the original source. I took some inspiration from this recipe from a baking group called “Tuesdays with Dorie” (they are baking their way through a cookbook by Dorie Greenspan, of Julia Child fame) and modified the coffee cake to use strawberries and rhubarb, with some ground ginger in the cake and candied ginger in the fruit and brown-sugar struesel topping. I also used whole wheat pastry flour, which gives the cake a slightly “toasty” flavour and stands up well to the more assertive rhubarb flavour. You actually wouldn’t even know it was made with whole wheat because the cake was still moist and light.

The candied ginger I used was marked “mild” and I could have easily used twice as much to get a better ginger taste. I could have also used more ground ginger in the cake batter, and the recipe below is how I would make it next time, ie: with more ginger! If ginger isn’t your thing, feel free to omit it, however it is a really nice addition to the classic strawberry rhubarb combination.

One thing to note: you can use fresh or frozen fruit, but don’t mix it together with the sugar and lemon juice until just before you are really to sprinkle it over the batter, otherwise you will end up with a bunch of liquid in the bottom of the bowl that you have to discard because it will make your cake soggy :(…
