Strawberry Balsamic Pie

Recently, the Food52 Baking Club had The Four and Twenty Blackbirds Pie Book as our cookbook of the month, which means that I now have three gorgeous pies to share with you. I don’t own this cookbook and couldn’t justify adding to my collection (but that might change… #cookbookhoarder), but I managed to find several recipes online, and after making two of their pies I was convinced to finally join our local regional library so I could get my hands on the actual book!

Decorated Swiss Rolls

This month I hosted the Daring Kitchen challenge and invited the group to make decorated Swiss rolls, aka “deco rolls”, in the style of Japanese food blogger and cookbook author Junko, who has taken the internet by storm with her adorable “kawaii” versions. This concept is a standard French pastry technique with the use of décor paste to create a pattern on a joconde sponge (which was tackled by the Daring Bakers back in 2011), and making it into a Swiss roll is an obvious next step, so when I was preparing this challenge, I decided to try it the French way. Unfortunately the results were not stellar – the décor paste cracked and the filling escaped when I rolled the cake up, because the décor paste was harder and less flexible than the surrounding sponge cake.

Apple Strawberry Custard Tart | Korena in the KitchenI’m going to say it: fall is my favourite season. I know everyone loves summer because SUNSHINE, but I love fall because SWEATERS, and SOUP, and CRISP MORNINGS, and FIRES IN THE FIREPLACE. Fall fees like a relief after a long, hot, parched summer – at this time of year, the weather is still pretty gorgeous but we’ve had a bit of rain so everything is green again, just in time for the riot of fall colours as the leaves start to turn. Not to mention the absolute bounty of fall produce. I’ve been at the local farmers market every Saturday for the past three weeks, just soaking in the gorgeous fall veggies, filling my cloth bags to the brim with massive heads of broccoli and cauliflower, big orange squash, peppers, kale, chard, and salad greens. Of course there are apples, but to my surprise, there is also one stand that is still selling local strawberries in October!

Sourdough Scones {Strawberry Nectarine Shortcakes with Balsamic Syrup}

I love scones, and I love sweet baked goods made with sourdough starter. So how is it that I’ve only made scones with sourdough starter ONCE before? It was time, and the Sourdough Surprises challenge this month was to make sourdough biscuits (which I took to mean scones), so I had a good reason. I modified a buttermilk scones recipe to use mature/discard sourdough starter, which has a comparable acidity to buttermilk and therefor the action of the chemical leaveners is similar. These scones are tender and slightly springy on the inside and crunchy-crumbly on the outside. They’d be great served with butter, jam, and a cup of tea, but I decided to turn them into shortcakes for dessert with the addition of some fruit and whipped cream.

While local strawberries are still at least a month off, I admit to thoroughly enjoying the juicy red California-grown gems that have been showing up at the green grocer lately. I can’t help myself – this winter felt SO LONG and strawberries are like the breath of fresh air and ray of sunlight that I’m craving right now. And while they might not be local, they are at least in season, and for that I am grateful!

Strawberry Balsamic Black Pepper Jam

IMG_5506Several weeks back, my Mum and I did an informal little “Cowichan Valley food tour”: we stopped by Teafarm, had lunch at Merridale Cider, bought spelt bread at True Grain Bread, enjoyed some Udder Guys ice cream, and did a wine tasting at Venturi-Schulze Vineyards. Of the six or seven other wineries that we drove past on our tour, we chose Venturi-Schulze because in addition to wine, they also make traditional balsamic vinegar.

We stayed in a house on the ocean and basically just vegged out. Daring Bakers: Strawberry Savarin

Strawberry Savarin | Korena in the KitchenNatalia of Gatti Fili e Farina challenges us to make a traditional Savarin, complete with soaking syrup and cream filling! We were to follow the Savarin recipe but were allowed to be creative with the soaking syrup and filling, allowing us to come up with some very delicious cakes!

Before this month, I had of course heard of the great epicure and gastronome Brillat-Savarin, but not of this cake by the same name – which is quite unlike any other cake I’ve ever made. It starts with a rich brioche dough baked in a ring pan (there are special Savarin pans, but a bundt or angel food cake pan works too). The baked cake is soaked in a flavoured syrup, which it soaks up like a thirsty sponge, and then the hole in the middle is filled with pastry cream and topped with fruit. Savarin is very similar to baba au rhum, which is soaked in rum syrup and usually made into individual cakes, and both baba and Savarin are somehow related to Polish babka (sort of like this babka – it’s all one big extended brioche family).

Strawberry Shortcake Torte

Today is my last day of work before an (unfortunately unpaid) four month summer vacation; an occasion which, I think, merits a cake. This strawberry shortcake torte actually made its appearance as dessert after Easter dinner, and it disappeared pretty darn quickly. Really though, what’s not to like? Daring Bakers: Fresh Fraisier

Jana of Cherry Tea Cakes was our July Daring Bakers’ host and she challenges us to make Fresh Frasiers inspired by recipes written by Elisabeth M. Prueitt and Chad Robertson in the beautiful cookbook Tartine.

A fraisier is a French pastry consisting of two layers of cake soaked in simple syrup with strawberries and pastry cream sandwiched between. Essentially, it is a free-standing trifle, but the special thing about a fraisier is the exposed fruit around the sides. To make a true fraisier, you have to use strawberries (fraise = strawberry), so I’m not really sure what to call my strawberry-raspberry-blueberry combination – a baies mélanger-ier doesn’t really have the same ring to it. But whatever you want to call it, it was tasty!

I did this challenge while I was in California visiting my aunt and uncle, and it was extra challenging because I was baking in an unfamiliar kitchen and also contending with a wheat and corn allergy. But it turned out beautifully and just proves that you don’t need fancy equipment or lots of space to make a spectacular dessert. …
