Toffee Coffee Cookies

August 3, 2013 By Korena in the Kitchen 8 Comments

IMG_4583Pinterest is a dangerous place. I was browsing through some of the hundreds of recipes I have pinned (I know some people also pin, like, fashion or crafts or home decor or whatever, but 98% of my pins are food) and these toffee espresso cookies just spoke to me. I’m not a regular coffee drinker, but I can’t say no to a coffee-infused baked good, especially when it is talking so loudly (must be the caffeine).

Maple Hazelnut Blondies

May 31, 2013 By Korena in the Kitchen 4 Comments

Maple Hazelnut Blondies | Korena in the KitchenWhile perusing the delicious brownie and blondie offerings from May’s Sourdough Surprises, I realized that I’d never made a blondie, let alone eaten one, and it became clear, based on the delicious recipes I was seeing, that this needed to change as soon as possible. A blondie is essentially a brownie made without chocolate, instead employing brown sugar for a caramel-toffee flavour. Imagine a square with the texture of a fudgey, chewy brownie and the taste of chocolate chip cookie dough (minus the chocolate chips) and you’ve got a blondie. And if you’re like me, you will feel compelled to make a batch as soon as you come to this realization.

The Creamiest Hummus

May 24, 2013 By Korena in the Kitchen 11 Comments

The Creamiest Hummus | Korena in the KitchenSometimes you just need a platter full of vegetables and some garlicky hummus to dip them in. It’s been ages since I last made hummus, and I’ve been wanting to try Smitten Kitchen’s secret to making “ethereally smooth hummus“. But I think I was also putting it off, because the thing is, the secret is kind of ridiculous and crazy-making: you have to peel the chickpeas, and that seems like a totally insane thing to do.

Lemon & Olive Oil Sugar Cookies

July 16, 2012 By Korena in the Kitchen 15 Comments

These cookies were born of necessity; the kind that is born at 8:30 on a Wednesday night after you’ve eaten dinner and watched a movie (Fantastic Mr. Fox, so great!) and are feeling the need for something sweet. Of course there’s nothing readily available and you don’t feel like leaving the house. Someone suggests baking cookies, but alas, there is no butter. There is, however, a litre of olive oil. Cookies made with olive oil? A challenge! (Thank goodness for the Google machine.)

These are an adaptation of a recipe that originally included black pepper, rosemary, and red wine – I can’t quite imagine what those ones must taste like (I think I might need to find out), but these ones are really quite good. …

Apple, Cilantro & Pecan Quesadillas

May 30, 2012 By Korena in the Kitchen 7 Comments

Sometimes the weirdest-sounding combinations turn out to be much better than expected. I once had a pizza topped with cilantro pesto, apples, pecans, and smoked mozzarella, which I thought would be totally weird, but was actually very very good. The other day I happened to have corn tortillas, cheese, and cilantro in the fridge, an apple in the fruit bowl, and pecans in the baking cupboard, and I figured that a quesadilla is sort of like a Mexican pizza, right?…
