Sourdough Scones {Strawberry Nectarine Shortcakes with Balsamic Syrup}

May 20, 2015 By Korena in the Kitchen 9 Comments

Sourdough Scones and Shortcakes | Korena in the Kitchen

I love scones, and I love sweet baked goods made with sourdough starter. So how is it that I’ve only made scones with sourdough starter ONCE before? It was time, and the Sourdough Surprises challenge this month was to make sourdough biscuits (which I took to mean scones), so I had a good reason. I modified a buttermilk scones recipe to use mature/discard sourdough starter, which has a comparable acidity to buttermilk and therefor the action of the chemical leaveners is similar. These scones are tender and slightly springy on the inside and crunchy-crumbly on the outside. They’d be great served with butter, jam, and a cup of tea, but I decided to turn them into shortcakes for dessert with the addition of some fruit and whipped cream.

The Empress Hotel’s Scones

June 15, 2014 By Korena in the Kitchen 14 Comments

The Empress Hotel's Scones | Korena in the KitchenThe Canadian Food Experience Project began June 7, 2013. As we share our collective stories through our regional food experiences, we hope to bring global clarity to our Canadian culinary identity. Visit Valerie’s blog, A Canadian Foodie, on the 15th for a round-up of this month’s posts.

This month marks one year since the beginning of the Canadian Food Experience Project, and subsequently, its end as a monthly challenge. Our host and the master-mind behind the project, Valerie, has asked us to close off this phase of the project by reflecting on and identifying our own Canadian voice, hopefully honed through participating over the past year. I admit that I haven’t been the most engaged participant, sometimes barely even taking the time to read the monthly round-up of posts, but simply having this project in the back of my mind for a year, mulling over the theme for each month, has certainly opened up my awareness of Canadian food. And by that I mean more than just Canadian cuisine or particularly “Canadian” dishes, but also the ingredients that grow locally and regionally and the people who cultivate or farm them. I have to say that a lot of this illumination comes from reading the blog FEAST, which details the journey of two food writers eating their way across the country on a Canada-wide road trip. They write about the food they eat, but also about the place and the people cooking and growing it. Perhaps that is what makes Canadian food? The unique intersection of person, place, and ingredients? I guess the same could be said about any kind of food, anywhere in the world, but maybe that’s OK? Obviously I have no answers, just some questions to throw out into the ether. I have no idea if any of this has altered my “voice” to be more Canadian (has it? you tell me!), but I do think it has become part of my own personal food philosophy, and as such, will continue to be something I consider when I cook and eat.

Buttermilk Scones

March 5, 2013 By Korena in the Kitchen 26 Comments

Buttermilk SconesI almost never buy buttermilk, but a few weeks ago I had some in the fridge (leftover from making these) and was looking for ways to use it up. Scones jumped into my head because I also happened to have some lemon curd to use up, and there is practically nothing I like better than scones with lemon curd.

Roasted Pear and Chocolate Chunk Sourdough Scones

November 20, 2012 By Korena in the Kitchen 24 Comments

Coincidence (noun): a striking occurrence of two or more events at one time apparently by mere chance.

Serendipity (noun): good fortune; luck; the faculty or phenomenon of finding valuable or agreeable things not sought for.

Was it a coincidence or serendipity that just days after bookmarking these roasted pear and chocolate chunk scones, I discovered that the Sourdough Surprises project for this month was sourdough scones?

Daring Bakers: Scone Mojo

January 27, 2012 By Korena in the Kitchen 44 Comments

Audax Artifex was our January 2012 Daring Bakers’ host. Aud worked tirelessly to master light and fluffy scones (a/k/a biscuits) to help us create delicious and perfect batches in our own kitchens!

Audax, who can offer a wealth of information, tips, and tricks for every challenge (even when he’s not hosting it), did not disappoint with this one. When I saw that the challenge was scones, I honestly wondered how much I would learn, being that I already considered myself to have “mastered” scones – I learned to make them in grade 7 Home Ec, and have been turning them out very successfully ever since. The spirit of this challenge was to find a way to make scones that works best for you, and Audax did a ton of research on what makes a good scone and the techniques to use to make them more flaky or more tender and cake-like. All things I never knew before! He also went into the difference between a scone and a biscuit, which as far as I understand, mostly comes down to geography: they are essentially the same thing, but in America they are called biscuits, and anywhere with a British influence they are called scones. In general, I personally tend to think of scones as sweet (or served with sweet things) and biscuits as savory (or served with savory things).

Lovely Scones

April 24, 2011 By Korena in the Kitchen 6 Comments

In grade 7/8 Home Ec, we learned how to make scones and sew boxer shorts. I have never in my life ever sewn another pair of boxer shorts, but this scone recipe is probably the most-loved recipe I have: I use it a lot and the scones (or baking powder biscuits, whatever you want to call them) always turn out perfectly. You can use whole wheat flour if you want or add chopped herbs, grated cheese, dried fruit, fresh or frozen berries, chocolate chips… endless delicious possibilities.

The important thing with making scones is not to over-mix when adding the milk to the dry ingredients, and also not to over-knead the dough before cutting it. The best way to think about it, in both instances, is as more of a folding action, rather than a stirring or kneading action. This gives you light, flaky, perfect scones.

Afternoon Tea at the White Heather Tea Room

March 19, 2011 By Korena in the Kitchen 18 Comments

My friend Lynette and I are secretly little old ladies at heart. One of the defining things about our friendship is our undying love of tiny sandwiches, scones with jam and cream, and tea, and we often celebrate the milestones in our lives by going out for afternoon tea. Heck, we don’t need a milestone – any occasion is a good excuse. We have even gone so far as to dream up a “Tea Tour” of the English countryside, wherein we would travel from tea shop to tea shop, sampling afternoon teas and writing reviews to publish in a book (who knows how realistic this is, but a dream is a dream, right?). In preparation, we have been to nearly every afternoon tea-serving establishment in Victoria, from the quintessential (and expensive) Fairmont Empress Hotel to the more-British-than-Britain (and now defunct) Blethering Place, but we have not yet written any reviews.

This is about to change. Prepare yourself for the first Tea Party review.

(This means we will have to revisit all the local places we have previously had tea at – darn! 😉 )…

Date and Bacon Scones from bon appétit magazine

March 8, 2011 By Korena in the Kitchen 1 Comment

Nate’s mum got me a subscription to bon appétit magazine for Christmas, and the March issue arrived last week. I went through and marked all the recipes I wanted to try, and on my second pass, I noticed a recipe that I had overlooked the first time: Bacon and Date Scones. Apparently the recipe comes from a restaurant in Venice, California, called Gjelina. I am a big fan of scones, salty-sweet combinations, and anything with bacon in it, so I knew I had to try these.

I took some inspiration from Heidi at 101 Cookbooks and modified the recipe a bit to use whole wheat pastry flour and raw cane sugar. The scones turned out well, but are very crumbly, I think because the whole wheat pastry flour has lower gluten than all purpose flour, so I’ve made a change to the recipe below to use half whole wheat pastry and half all purpose flour.

I wasn’t expecting these to be as sweet as they are, so I served them with soup. It worked alright, but they are better on their own, smeared with butter. The dates are sweet and almost caramelized, the bacon is salty and chewy, and the scones themselves are flaky. These are definitely a must-try!
