Salted Caramel & Chocolate Rice Crispy Squares | Korena in the Kitchen

Two weekends ago I went on a canoeing/camping trip in the Gulf Islands, where I was specifically tasked with bringing dessert for one of the evenings. My plan was to make “campfire fondue”, which consists of melting a handful of chocolate chips in a little package of foil beside a campfire, and then dipping fruit (oranges and banana chips in this case), squares of pound cake, and toasted marshmallows in it. Alas, we ended up waiting out high winds for two nights on Portland Island where fires are not allowed, and then had to cut the trip short by a day because the wind was only supposed to get worse (it was a very exciting journey home!), so unfortunately my campfire dessert never happened. Which meant that I had a whole bunch of marshmallows and chocolate chips on my hands after the trip.

White Chocolate Blueberry Bars

Remember the amaretti that I made accidentally? When I made them, what I actually meant to make was amaretto cookies to turn into crumbs for the base of these white chocolate blueberry bars (which I made a few weeks back but am only just getting around to posting about).

My oven was being a beast and the amaretto cookies came out sort of burnt, and there was nothing particularly spectacular about the homemade version, so next time I’ll just use store bought (I don’t say that often – maybe I just needed a different recipe?). However, regardless of the provenance of the cookies in the cookie crumb base, these bars are fantastic and perfect to make in the summer because they are no-bake (especially if you don’t do anything silly like baking your own amaretto cookies) and they feature delicious summer berries. Press a cookie crumb base into a pan, scatter over some blueberries, top them with a white chocolate ganache, and chill….

Power Truffles

These are inspired by a blog post I came across on the lululemon website with several recipes for “energy balls”, but somehow that just doesn’t sound appetizing… so I’m calling my version “power truffles”. These are very tasty, packed with peanut butter, nuts, and seeds, and will be a great post-workout snack, which is what I made them for… but they would be equally good as just an afternoon snack 😉

To boost the energy content a little more, the rolled oats could be replaced with quinoa or amaranth flakes, both of which are high in protein. The cocoa powder makes these a little bit chocolatey, and due to the peanut butter and honey in them, they taste slightly like peanut butter and honey on toast, which I quite enjoy. To change things up, they would also be good with almond or cashew butter and perhaps agave syrup, which I haven’t experimented with yet. Oooh, I can imagine a version with almond butter, cocoa powder, and dried cranberries instead of raisins… or dried cherries maybe? Yum!

I made these in about 15 minutes total – no baking required. The most time-consuming part was rolling them, and even that was pretty darn easy.
