Leek and Bacon Quiche with Wholegrain Pastry

Leek & Bcaon Quiche with Whole Grain CrustNate and I had a pretty quiet Easter weekend at home, so instead of a big Easter Sunday dinner, I made a quiche with leek and bacon, a dish of scalloped potatoes, and a green salad (and dessert, of course – that post is coming!). I was lucky enough to have dinner with my parents on Salt Spring on Good Friday, which included not only the traditional baked ham but also a huge pile of fresh crab, caught by a family friend. It was amazing, but after all that food I was quite happy to keep it lighter for the rest of the weekend.

One for You, One for Me

Last weekend I made two chicken, leek and mushroom pies: one for me and Nate, and one to give to some good friends who just recently had a sweet baby boy (I also made them some Perfect Peanut Butter Chocolate Chip Cookies). They appreciated it very much, but so did I – because, while I obviously love to cook and bake, what I really love is sharing what I’ve made with people and seeing them enjoy it (or in this case, hearing about it). It’s pretty fulfilling to create something that makes other people happy, be it a piece of art, some words on a page, or a slice of chicken pie and a peanut butter cookie.

Leek, Swiss Chard & Prosciutto Quiche (and a non-shrinking tart crust!)

The thing that always stumps me about quiche is the crust. The pastry crust for quiche needs to be par-baked before adding the filling, otherwise it won’t cook through and will be soggy (and nobody likes a soggy-bottomed quiche). My go-to pie crust has a tendency to shrink a lot when par-baked, and other pie crust recipes I’ve tried that are supposed to be “more suited” to par-baking come out with the texture of cardboard (just as bad as a soggy-bottomed crust).

So, I’ve been looking for a pastry crust that stays flaky and doesn’t shrink too much when par-baked, and I finally found one! Also, I discovered the secret to stopping the pastry from sliding down the sides of the pie plate while baking. Success!

Leek and Potato Soup

This recipe originally comes from a friend of my Mum. It’s one of my favorite comfort foods: simple, delicious, satisfying. It is good enough plain, but what makes it extra good is stirring toppings into your bowl of soup. I really like adding shredded cheese and hand-peeled shrimp. Crumbled bacon is also really good.

I don’t worry about exact measurements with this soup – it is very forgiving, and also versatile for substitutions and personal preference. Try adding a sweet potato and a spoonful of chipotle puree and top it with bacon and cheese for a Southwestern-ish version.

Use whatever type of potato you happen to have on hand. My favorite is Yukon Gold, but any kind will work. Look for leeks with as much white as possible, and clean them really well to remove any dirt that gets between the layers. To clean, remove the tough dark green parts, reserving the white and light green parts. Slice in half lengthwise first, the slice into semi circles. Place them in a large bowl of cold water and swish them around with your hands. Let it settle for a minute – the dirt will fall to the bottom of the bowl and the leeks will float on top. Scoop out the leeks, drain in a colander, and proceed with the recipe :)…
