Happy Canada Day!

Candied Salmon Salad Rolls | Korena in the KitchenCanada turns 147 years old today! If you are looking for a way to celebrate, may I suggest you make these salad rolls with candied salmon, which I posted about over on the SeaChange Seafoods blog. They are perfect to take to a picnic or barbeque, and can stand as either an appetizer or a side dish or a full meal, which is how Nate and I usually eat them.

And while you’re here, may I also suggest that you make this cherry almond Dutch baby: it is TO DIE FOR. I made it for breakfast a few days ago and I’m still thinking about it. It tastes like a cross between a cherry clafoutis and a cherry-almond danish, ie: really, really amazing. The only changes I made were to add a bit of vanilla bean paste to the batter and to bake it in a slightly smaller (nine inch) cast iron skillet. So good!

May’s theme for the Canadian Food Experience Project is “The Canadian Garden”, which frankly seems like a bit of a joke at this time of the year. Even living in one of the most temperate places in the country (“Cowichan” means “The Warm Land” in the local First Nations language), my garden is mostly bare dirt at the moment… save for my rhubarb plant.

Lemon Caper Cream Cheese with Smoked Salmon

Lemon Caper Cream Cheese with SeaChange Smoked Salmon - perfect for Easter brunch | Korena in the KitchenSome of you may remember that I did a few few guest posts a while back for SeaChange Seafoods, featuring their delicious smoked salmon (my personal favorites include recipes for fettuccine alfredo with smoked salmon, smoked salmon and corn chowder, and smoked salmon and roasted tomato quiche). Over the last six or so months, SeaChange has completely re-launched their brand, which includes all new packaging and a whole new website, and I’ve been lucky enough to be involved in the process as their food stylist on several photoshoots, one of which took place in my dining room!

It’s been a blast working with a professional photographer (John Cameron) and taking cues from a real design company (Carter Hales Design Lab) to try to evoke a certain feeling or story with something as simple as a beautiful piece of smoked salmon, and I feel totally privileged that I’ve been getting paid to do something I love so much. Here are just a few of the images we’ve created so far:

Back in November, I also had the opportunity to cater SeaChange’s re-launch party. I traveled to Salt Spring Island, cooked my butt off all day, and served up a whole bunch of “small bites” featuring smoked salmon to about thirty people (and of course, wildly over-estimated how much food I’d need to make – but it’s better to have too much than not enough when it comes to feeding people, right?). I was so busy all day that the only thing I managed to take a picture of myself was this gigantic veggie platter – but it’s pretty, right?

For the party, I made a few of the dishes that already appear on the SeaChange website (the aforementioned quiche, roast potato canapés with smoked salmon, and smoked salmon devilled eggs), along with a few new ones, including a delicious lemon caper cream cheese you can easily whip up to serve with smoked salmon – a perfect addition to an Easter brunch. Blackberry Basil Corn Salad

My friend Jenni of The Gingered Whisk – fellow Daring Baker, Sourdough Surpriser, and all around awesome lady – just recently had a baby girl, and back in the summer she asked me to write a guest post for her while she takes some time off from blogging to settle into life as a momma of two. I was honoured to be asked, and sent her a summery recipe for a salad made with blackberries, basil, and corn (if you think that’s a weird combination, just trust me on this one!). If I’d been thinking ahead, I would have written about something a little more fall-oriented (given that the baby wasn’t born until September) rather than something celebrating the wonders of late summer produce, because now that the recipe is live on Jenni’s blog, corn and basil and blackberries are – sadly – just a sweet summer memory. But this is a salad that you MUST make, so please, bookmark the recipe for next summer – it’s a killer flavour combination! Painted Desert Salad with Maple Glazed Smoked Salmon

Painted Desert SaladI’m sharing one of my very favorite salads over on the SeaChange blog today. It has roasted red pepper, avocado, smoked cheese, walnuts, sage, and of course smoked salmon (of the delicious maple glazed variety!) along with an extremely wonderful chipotle-maple-balsamic vinaigrette. Cedar Planked Teriyaki Chicken

Contrary to the image that might pop into your head when you think “Canadian winter“, on the West coast of Canada it doesn’t actually get super snowy and impossibly cold – it mostly just gets super rainy and only rather cold. This means that, among other things, it is still totally possible to grill or barbeque outside through the winter. Which explains how I found myself cooking cedar planked teriyaki chicken on the barbeque on a drizzly November day. Read the rest of this post at the SeaChange blog! 🙂
