Shortbread, Two Ways

Shortbread, 2 waysEvery year at Christmas, I go a little bit cookie-crazy. This year is no exception, so here comes Christmas Cookie Post Numero Uno. Stay tuned for many more.

Shortbread is kind of synonymous with Christmas. I don’t have one shortbread recipe that I re-make every year (unlike this biscotti), but I always make shortbread in some form or another. In the past this has included piped coffee kisses and hazelnut shortbread, both of which are totally delicious, but I wanted to emulate the more traditional chunky rectangles of Walker’s shortbread this year.

Three-Cheese Tomato and Sausage Pasta Sauce

Three-Cheese Tomato Sauce with Sicilian SausageHappiness is a bowl of pasta.

Top it with rich, cheesey tomato sauce spiked with homemade Sicilian sausage and you’ve got euphoria, as far as I’m concerned.

Whole Grain Levain for Bread Baking Day #54

For a while I’ve been searching for a “country style” rustic sourdough loaf with some whole grain in it to bake as our daily bread, and after lots of trial and error, I finally settled on this formula, based on a recipe from Chez Pim. I was already planning on sharing it when I discovered that November’s theme for Bread Baking Day #54 is overnight bread, which is perfect, because this bread, being of my favorite no-knead, long-rest variety, fits right into that category.

Salted Butter Caramel Apple Strudel

Almost every fall, I end up with a whole bunch of apples from my Mum (usually from the tree of a friend of hers), and more often than not, those apples end up in one of my very favorite things to make: apple pie. For me, fall is not complete without an apple pie or two.

But sometimes it’s good to change things up. My friend Sibella feels the same way about apple strudel as I do about apple pie, and when I saw her recipe – complete with homemade strudel dough that you stretch and stretch until it is see-through-thin and big enough to cover your entire kitchen counter – I changed my tune from apple pie to apple strudel.

Cedar Planked Teriyaki Chicken

Contrary to the image that might pop into your head when you think “Canadian winter“, on the West coast of Canada it doesn’t actually get super snowy and impossibly cold – it mostly just gets super rainy and only rather cold. This means that, among other things, it is still totally possible to grill or barbeque outside through the winter. Which explains how I found myself cooking cedar planked teriyaki chicken on the barbeque on a drizzly November day. Read the rest of this post at the SeaChange blog! 🙂

Sourdough English Muffins

English muffins just happen to be one of my favorite breakfast foods (only partly because they form the base for eggs benedict) and they are one of those things that I keep meaning to make but never get around to doing. Kanelbullar and a New Kitchen!

Big announcement time: Nate and I bought a house!!

We moved in the middle of August and have settled in pretty quickly – we love it here. We are in Shawnigan Lake, about 40 minutes from Victoria where we both still work, but we traded up for lots of privacy and green space. 🙂 Plus the Cowichan Valley has a seriously thriving local food scene, which I am very much looking forward to exploring!

Pineapple Coconut Banana Bread

I have a banana bread weakness. Whenever I see a new and interesting recipe, especially one that has been raved about, I can’t help myself: I have to make it. I stockpile over-ripe, frozen bananas in my freezer (I think that’s a form of enabling) just so that I can bake banana bread whenever the mood strikes me, as it did the moment I read about this sugar-topped coconut version.

I had most of a can of pineapple in the fridge and thought it would be a good addition to the loaf. It was. And while the coconut and pineapple add texture and sweetness, the sugar on top adds crunch, and the dark rum adds a bit of luxury, my favorite part of this banana bread is the hint of nutmeg in the batter. Somehow it brings all the flavours together and makes them sing. I know this sounds awfully flowery for a loaf of banana bread, but MAN is it ever good!…
