Blackberry Cream Cheese Ensaimadas

August 29, 2014 By Korena in the Kitchen 6 Comments

Blackberry Cream Cheese Ensaimadas | Korena in the KitchenEnsaimadas, a coiled Spanish pastry of enriched yeasted dough, were the second half of August’s Daring Bakers Challenge, and I’m happy to share that these blackberry and cream cheese filled babies are probably the best thing I’ve made in a long time. Thank you Swathi for this recipe!

Daring Bakers: Kürtőskalács {Chimney Cakes}

August 27, 2014 By Korena in the Kitchen 13 Comments

Kürtőskalács (Chimney Cakes ) | Korena in the Kitchen

The August Daring Bakers’ Challenge took us for a spin! Swathi of Zesty South Indian Kitchen taught us to make rolled pastries inspired by Kürtőskalács, a traditional Hungarian wedding pastry. These tasty yeasted delights gave us lots to celebrate!

Once again, the Daring Bakers have introduced me to a pastry I probably never would have come across myself, and given me a history lesson in the progress. Kürtőskalács or “chimney cakes” are a traditional yeasted pastry from Szeklerland, which is an ethnic Hungarian enclave in the Transylvanian region of present day Romania. The pastry is now common in many Hungarian-speaking regions as well as the Czech Republic.

Daring Bakers: Chocolate & Vanilla Checkerboard Cake

July 27, 2014 By Korena in the Kitchen 24 Comments

Chocolate & Vanilla Checkerboard Cake | Korena in the KitchenFor the July Daring Baker’s Challenge, Ruth from The Crafts of Mommyhood challenged us to bake a cake. But not just any cake; she asked us to add in a special surprise for our eyes as well as our taste buds!

It was my birthday at the beginning of July (thirty one! how the hell did that happen?!) so, as per my favorite birthday tradition, I made myself a cake. Coincidentally, the Daring Bakers challenge this month was to make a cake with a surprise on the inside, so I made this cake, which looks like nothing special at first…

Daring Bakers: Ukrainian Easter Paska

April 27, 2014 By Korena in the Kitchen 41 Comments

Ukrainian Paska | Korena in the KitchenThe April Daring Baker’s Challenge was hosted by Wolf of Wolf’s Den. She challenged us to Spring into our kitchens and make Easter breads reflecting cultures around the world.

While I don’t personally celebrate Easter in a religious sense, I do look forward to any holiday that has a food tradition to go with it (see: Christmas baking). Paska, a special Eastern European Easter bread, is one such food tradition, and the egg-rich Ukrainian version with its intricately decorated top is one that I’ve been wanting to try for a while now. This month’s challenge was the perfect opportunity to do it.

Daring Bakers: Nougat Torrone

March 27, 2014 By Korena in the Kitchen 22 Comments

Nougat Torrone with Almonds, Pistachios and Cocoa Nibs | Korena in the Kitchen

The March 2014 Daring Bakers’ challenge was hosted by Rebecca of BakeNQuilt. She challenged us to learn to make classic nougat and to make it our own with our choice of flavors and add-ins.

Nougat is not something I’d ever contemplated making before this month – the only real experience I’ve ever had eating it is inside a Toblerone bar, so I wasn’t exactly sure what I was in for. Nougat is, in our host Rebecca’s words, “an aerated candy made from sugar, honey, egg whites, and nuts”, which can range in texture from “chewy, soft, and tender to hard and brittle”. It’s a mostly European confection (nougat torrone is the Italian kind), although it seems similar to divinity or divinity fudge in the Southern US, and if you’ve ever eaten a Mars or Snickers bar, you’ve had the watered-down industrial production version. When soft and chewy, traditional nougat is sort of like gourmet marshmallow for grown-ups. When hard and brittle, it’s rock-solid enough to break a tooth on but still very satisfying when chiseled into small bits to savor (and it would be so good mixed into chocolate, à la Toblerone!).

Daring Bakers: Beautiful Bread

February 27, 2014 By Korena in the Kitchen 27 Comments

Beauty surrounded the Daring Bakers this month as our host, Sawsan, of chef in disguise, challenged us to make beautiful, filled breads. Who knew breads could look as great as they taste?

This month’s posting date snuck right up on me so I’ll keep this brief! I was delighted with my friend Sawsan’s challenge this month to make beautiful twisty bread in the style of the very talented bread artist Valentina Zurkan. I’ve made sticky buns similar to this before filled with lemon and rosemary, so I opted for a savoury pizza bread version and a slightly more complicated shape this time.

Daring Bakers: Schichttorte

January 27, 2014 By Korena in the Kitchen 19 Comments

The January 2014 Daring Bakers’ challenge was hosted by Francijn of “Koken in de Brouwerij“. She challenged us all to bake layered cakes in the tradition of Baumkuchen (tree cake) and Schichttorte (layered cake).

When I first read Francijn’s challenge, I thought I had no idea what I was getting in to. I’d never heard of Baumkuchen – a traditional German cake baked in layers on a rotating spit in front of a grill, whose final spiraling layers resemble the cross-sectional growth rings of a tree [see how it’s done] – but when I got to the Shichttorte – a layer cake made by baking very thin layers of batter one by one on top each other – I realized that I had in fact bookmarked a similar recipe in a cookbook, probably close to fifteen years ago! I thought the recipe was just an extremely complicated way to bake a cake, which is why I had never attempted to make it before – I had no idea it was a legitimate traditional method, and I was excited to finally give it a try.

Daring Bakers: Chocolate Peppermint Whoopie Pies

December 27, 2013 By Korena in the Kitchen 14 Comments

The December Daring Bakers’ Challenge had us all cheering – the lovely and talented Bourbonnatrix of Bourbonnatrix Bakes was our hostess and challenged us to make fun, delicious and creative whoopie pies! Delicious little cake-like cookies sandwiching luscious filling in any flavors we chose… What else is there to say but “Whoopie!”

So, I’ve been meaning to post about Christmas cookies for the past two weeks… but I’ve literally been too busy baking the things to post about them at all. Now that Christmas 2013 has passed (MERRY CHRISTMAS, by the way!), when I finally do get around to writing about them, you can consider it extremely early preparation for next year… ;)…

Daring Bakers: Sfogliatelle Ricci and Lobster Tail Pastries

November 27, 2013 By Korena in the Kitchen 38 Comments

Sandie of the lovely blog, Crumbs of Love, was our November Daring Bakers hostess. Sandie challenged us to make a traditional Italian dessert, along with its American version – Sfogliatelle (or better known in the US – lobster tails!) The flakey, 1000 layers of super thin dough, shaped into a horn and filled with a scrumptious filling. Così buono!

Being that this is the month we said goodbye to Lis, the Queen of All Daring Bakers, it is fitting that this month’s challenge was a doozy, something that probably none of us had ever made before and some of us (myself included) had never even heard of. Sfogliatelle? Lobster tails? Turns out we’re not talking about the back end of a crustacean, but a flaky layered pastry stuffed with a delicious filling.

Hugs, Lis xoxo

November 15, 2013 By Korena in the Kitchen 12 Comments

When I started my blog back on January 2011, one of my main reasons for doing so was to join the Daring Bakers. It took me a few months to work up the courage to actually join the group, and I completed my first challenge in April 2011: maple mousse in an edible container, pictured above. I remember logging on to the forum for the first time and reading the introduction to the challenge recipe, posted by someone named Lis, whose message included such effusive, effervescent positivity, quirky humour, and lots of smiley faces. I soon learned that Lis was the co-founder of the Daring Bakers and the driving force behind the Daring Kitchen (which encompasses both the Daring Bakers and the Daring Cooks), the one who maintained the website, who organized the hosts for each challenge, who basically kept the lights on in the kitchen, as it were.

I also discovered that many of my favorite and inspirational food bloggers, including Julie Van Rosendaal of Dinner with Julie, Helene Dujardin of Tartelette, and Zoë François of Zoë Bakes, had themselves been Daring Bakers at one point. I got to know Lis a little bit better through emailing back and forth with her this summer when I hosted a Daring Bakers challenge, and more recently a few weeks ago when she invited me to write product and recipe reviews for the Daring Kitchen website.

I am so, so sad to learn that Lis passed away unexpectedly on Tuesday. This woman who I never met in person and most likely never would, who I only knew via email, but who provided a huge opportunity for personal growth, confidence, and inspiration to me and countless other food bloggers, home cooks and bakers – literally, I bet there are thousands of us who owe some of our kitchen chops to Lis and the Daring Kitchen, not to mention the network of blogging friends that I have met through the Daring Bakers.

Kelly of Sass & Veracity suggested that we all celebrate Lis with a tribute post today, sharing something we’ll remember about her. I will remember how Lis always ended her emails and messages on the Daring Kitchen forums with, “Hugs, Lis xoxo”, sending support and love as if she was your closest friend. For the past three years of my life, each month has started with a message on the Daring Bakers forum from Lis with her cheerful sign-off, kicking off the month with humour and the chance to challenge myself. Lis, you leave a giant hole in our hearts, but you also leave the Daring Kitchen as your legacy, and for that I will always thank and remember you.
