Maple Stroopwafels

March 27, 2016 By Korena in the Kitchen Leave a Comment

Maple Stoopwafels | Korena in the Kitchen

This post is two days late for International Waffle Day, and is not exactly your traditional Easter Sunday fodder (Happy Easter! Hot cross buns forthcoming!), however today is Daring Kitchen reveal day, and I’ve been waiting to share these babies for weeks. This month, the Daring Kitchen made stroopwafels, a sweet treat of Dutch origin in which a waffle cookie (“wafel”) is sandwiched together with buttery caramel syrup (“stroop”). Honestly, with a concept like that you can’t possibly go wrong, however if I didn’t already have such a soft spot for Dutch baked goods (see: plain and gevulde speculaas, peperkoek, and schichttorte), I might have let this challenge pass me by, because stroopwafels require the use of a rather specific cooking appliance that I do not own and didn’t really want to purchase: a waffle cookie iron or pizzelle iron. But, having been introduced to exactly how delicious stroopwafels are by my half-Dutch friend Lynette, I made the effort to take a ferry to Salt Spring Island to borrow a waffle cookie iron from her dad just so that I could make them myself!

Chocolate Peppermint Pinwheels

December 23, 2015 By Korena in the Kitchen 3 Comments

Chocolate Peppermint Pinwheels | Korena in the KitchenI took these photos at 8:30 pm on December 21, literally the darkest day of the year. It’s awfully difficult take take natural light photos when you never see your house in the daylight during the week. Blogging is such hard work!

I plunged into the Christmas cookie madness with both feet last week and spent every evening after work baking cookies. I think I was averaging two recipes a night in preparation for our annual pre-Christmas trek to Vancouver to see family, which coincided this year with my remarkable grandfather’s ninety-eighth (!!) birthday. These cookies in particular are a re-make of a childhood favourite that I remember asking my mum to make every year. Something about the spiraled layers of different coloured dough mixed with the flavour of peppermint and chocolate makes me feel all nostalgic.

Lemon Pistachio Biscotti

December 16, 2015 By Korena in the Kitchen 2 Comments

Lemon Pistachio Biscotti | Korena in the KitchenI had a jarring realization this past weekend that we were less than two weeks away from Christmas and that I hadn’t started any Christmas shopping – or worse, any Christmas baking. But then I remembered that I had actually baked and sent off holiday cookies for the Great Food Blogger Cookie Swap several weeks ago, so all was not lost. I participated in the Cookie Swap in 2013, then missed the sign-up deadline last year, so I was pretty excited to be part of it again this year. Participants pay a small entrance fee to raise money for the Cookies for Kids Cancer campaign, and then are matched up with three food bloggers to send cookies to. In return, you receive cookies from three other bloggers. These are the goodies that I got in the mail:

  • Vegan candy cane shortbread from Kacey of The Cookie Writer
  • Vegan snickerdoodles from Lisa of The Viet Vegan
  • Three different kinds of brown sugar cookies from Allison of The Bacon Eating Jewish Vegetarian

Merry Christmas to me, indeed!

Linzer Cookies

December 23, 2014 By Korena in the Kitchen 2 Comments

Linzer Cookies | Korena in the Kitchen

If you’re looking for the perfect Christmas cookie, I think I may have found it: the Linzer cookie. Last year I made a Linzer torte – rich walnut pastry spiced with cinnamon, cloves, and lemon zest filled with raspberry jam – that ended up being my favourite item on the Christmas Baking List, and I couldn’t wait to try it in cookie form. They have that traditional Old World Christmas feel thanks to their Austrian roots, and are just fussy enough (rolling the dough, cutting out the cookies, assembling them, etc) to fall into the “special occasion” category.

Classic Molded Shortbread

December 21, 2014 By Korena in the Kitchen 3 Comments

Classic Molded Shortbread | Korena in the KitchenI’ve had this post “on deck” for about two weeks now but just haven’t been able to find the time to add the pictures and actually publish it. I remember when I was posting three times a week on this here blog – now I’m lucky if I can manage three posts a month! However, with it being the 2014 Christmas Baking Season, and with all the blog-worthy baking that has been coming out of my kitchen, and fact that I’m off work for a few weeks over the holidays, maybe I’ll actually be able to get it together to post a few more times before this month is over…

Whole Wheat Chocolate Chip Cookies and my new grain mill!

November 9, 2013 By Korena in the Kitchen 13 Comments

Back in the summer when I wasn’t working full time and was actively looking for ways to fill my time, I applied to join the Grain Mill Wagon challenge. Basically, the WonderMill Grain Mill company sends you a grain mill (for free!) and in return you write three recipe posts for their blog within two months, and the grain mill is yours to keep. This is a pretty sweet deal and I was definitely interested in getting my hands on a grain mill ever since reading about Kate of Venison for Dinner milling her own flour. Talk about “from scratch”!

I didn’t hear back from the company for a few months and figured that I didn’t get chosen – but after I’d gone back to work in September, I got an email inviting me to the challenge. I was no longer in the market for a new hobby, but I also wasn’t going to turn down a free appliance! I got the grain mill at the beginning of October, and since then it’s been sitting in its box in a corner of the dining room, waiting for me to get around to reading the instructions. Seeing as it’s now November and I’m half-way to my two-month deadline, I figured I should get my butt in gear. So I made cookies. Whole wheat chocolate chip cookies made with freshly milled flour, to be exact. Head over to my post on the Grain Mill Wagon blog to hear all about them. 🙂

Full disclosure: I was compensated for my time and provided with a WonderMill Grain Mill free of charge in exchange for this post, but my thoughts and opinions are my own. 🙂

Toffee Coffee Cookies

August 3, 2013 By Korena in the Kitchen 8 Comments

IMG_4583Pinterest is a dangerous place. I was browsing through some of the hundreds of recipes I have pinned (I know some people also pin, like, fashion or crafts or home decor or whatever, but 98% of my pins are food) and these toffee espresso cookies just spoke to me. I’m not a regular coffee drinker, but I can’t say no to a coffee-infused baked good, especially when it is talking so loudly (must be the caffeine).

Would you like some cookie with your chocolate?

June 18, 2013 By Korena in the Kitchen 6 Comments

Reverse Chocolate Chip Cookies | Korena in the KitchenWhile I’ve definitely made my fair share of regular chocolate chip cookies, the reverse chocolate chip cookie – that is, chocolate dough studded with white chocolate chips – has eluded me. Until now.

Korena’s Cookies

June 12, 2013 By Korena in the Kitchen 7 Comments

Korena's Cookies | Korena in the KitchenThis is a cookie recipe that I came up with when I was about 12 years old, and I tell ya, I was onto something! It’s been a while since I last made them but they’re just as good as I remember: buttery, chewy oatmeal cookies with a hint of caramel from brown sugar, loaded with chocolate chips, nuts, and dried fruit. They are thick and almost cake-like in the middle, and thin, lacy, and crisp around the edges. Seriously delicious.

Daring Bakers: Gevulde Speculaas

January 27, 2013 By Korena in the Kitchen 27 Comments

Gevulde SpeculaasFrancijn of Koken in de Brouwerij was our January 2013 Daring Bakers’ Hostess and she challenged us to make the traditional Dutch pastry, Gevulde Speculaas from scratch! That includes making our own spice mix, almond paste and dough! Delicious!

I had just posted about the speculaas I made for Christmas, so it was like déjà vue to read that the Daring Bakers challenge this month was speculaas. But these ones are different: they are gevulde speculass, which means they are stuffed with almond paste to make more of a dense, crumbly cake than a cookie. Interestingly, the dough for gevulde speculaas is essentially the same as the dough as for making speculaas cookies, but you end up with something completely different. And as much as I like regular speculaas, turns out that I loooooove gevulde speculaas, and I implore you to make these as soon as possible!
