Samuel Adams Winter Lager Roasted Chicken with Orange, Fennel, and Chili

Nothing says comfort food like roast chicken, and although we are finally crawling out of the depths of winter (it felt like this one lasted forever), comfort is still what I’m after. I’ve seen lots of recipes for roast chicken with wine, but I’m more of a beer girl myself so I wanted to experiment with a beer roasted chicken (similar to beer-can chicken, but classier!).

One good thing about winter is the variety of seasonal brews available, often with a slightly spicy character. I used Samuel Adams Winter Lager, which is a hoppy, bock-style beer with notes of orange, cinnamon, and ginger, although any slightly hoppy beer with citrus flavours could be used. (Samuel Adams is available in Canada at the LCBO or The Beer Store in Ontario, BCLDB in British Columbia or Liquor Depot in Alberta. I only wish I’d been able to find this Samuel Adams beer!). To compliment the beer, I smeared a flavoured butter of orange zest, fennel seeds, and chili flakes under the the skin of the chicken, stuffed the cavity with orange and a clove of garlic, and basted it with beer while it roasted. The pan juices, full of flavoured butter and slightly reduced caramelized beer, were turned into a delicious, drunken gravy with a little extra beer and a squeeze of orange juice.

I was having one of those cravings when I found these adorable miniature Seckel pears at the grocery store, and I immediately thought of poaching them in wine and spices and serving them with rice pudding. But not just any rice pudding: sweet dessert risotto flecked with vanilla bean seeds. If you like creamy rice pudding, you’ll love this. All the stirring that makes a creamy risotto with broth makes an even creamier dessert risotto with milk.

One for You, One for Me

Last weekend I made two chicken, leek and mushroom pies: one for me and Nate, and one to give to some good friends who just recently had a sweet baby boy (I also made them some Perfect Peanut Butter Chocolate Chip Cookies). They appreciated it very much, but so did I – because, while I obviously love to cook and bake, what I really love is sharing what I’ve made with people and seeing them enjoy it (or in this case, hearing about it). It’s pretty fulfilling to create something that makes other people happy, be it a piece of art, some words on a page, or a slice of chicken pie and a peanut butter cookie.

Roast Chicken with Black Bean Gravy

When I was a kid, roast chicken and gravy was my family’s favorite comfort food (I think it’s safe to say it still is) and it was always up to me to make the gravy. I don’t know how or where he got the idea, but on one occasion my Dad convinced me to put a handful of cured, salted Chinese black beans in the gravy. This was another case of a strange flavour combination working out much better than expected, because surprisingly, the gravy didn’t taste like Chinese take-out – it tasted like delicious chicken gravy with a good dose of salty umani flavour thanks to the black beans. After that successful case, almost any kind of gravy was subject to the addition of black beans, including Christmas turkey gravy (although my Mum was somewhat less enthusiastic about this than my Dad and I)….

Turkey Pie with Parmesan & Black Pepper Biscuits

I know it’s about three months late to be posting a recipe for using up Christmas turkey, but I’ve had some turkey leftovers languishing in my freezer just begging to be made into a pie. Who am I to refuse such a request? This pie will not only make your house smell fantastic, but its comfort food mix of turkey, roasted root vegetables, and biscuits will make a dreary mid-winter day seem less so!

I chose to top this pie with biscuits because they are easy and good for soaking up gravy, but it would be equally tasty with your favorite pie crust in place of the biscuits (make it a single or double crust – your choice). If you go the pie crust route, I recommend working some parmesan and black pepper into it – it’s a great combination.

Turkey Pie with Parmesan & Black Pepper Biscuits

Biscuits

In a medium bowl, stir together:

1 1/2 cups flour

3 tsp baking powder

1/4 tsp freshly ground black pepper

large pinch of salt

With a pastry cutter, cut it:

5 tbsp cold unsalted butter

Blend until the butter is in pea-sized chunks. Add:

1/2 cup finely grated parmesan cheese

Toss the parmesan into the butter-flour mixture, then make a well in the center and add:

3/4 cup cold milk

With a fork, stir in the milk with as few strokes as possible, using a folding motion to blend in the flour from the bottom of the bowl. It should just come together in a shaggy, sticky dough.

Turn the dough out onto a floured surface and knead it gently 2 – 3 times to gather it all together. Pat it out into a rectangular shape and fold it in thirds like a letter.

Pat it down again into a rectangle and repeat. After the second fold, shape the dough into a circle and pat it out into a 7-inch round. Cut it into 8 wedges with a sharp knife, using a straight downward cutting motion (this will help the cut edge rise up and be flaky).

Transfer the wedges to a lightly floured plate, cover them with plastic, and refrigerate while you make the filling.

Turkey & Roasted Vegetable Filling

Preheat the oven to 425˚F. Chop the following into 1/2 inch chunks:

2 medium carrots (about 1 cup)

2 medium parsnips (about 1 cup)

4 – 5 button mushrooms (about 1 cup)

1 large or 2 small leeks, white part only (about 1 1/2 cups – wash them very well!)

Spread the vegetables in a single layer on a baking sheet and toss with:

a few tablespoons of olive oil

generous salt and pepper

Roast the vegetables for 20 – 25 minutes, stirring halfway through, until softened and starting to brown.

Meanwhile, prepare the gravy. In a large pan over medium heat, melt:

2 tbsp unsalted butter

When it foams, add:

2 heaping tbsp all purpose flour

Whisk and cook for a few minutes, until it starts to smell nutty.

While whisking constantly, slowly pour in:

2 cups chicken or turkey stock

It will seem very thin and watery but will thicken up when it reaches a boil. Raise the heat to medium-high to bring it to a boil and thicken, then reduce back down to medium-low.

Season to taste with:

a few dashes of Worchestershire sauce

~ 1 tbsp soy sauce (less if using salted stock)

~ 1 – 2 tsp Marmite

1/4 tsp garlic powder

1/2 tsp dried sage

1/2 tsp dried thyme

salt and pepper

Worchestershire, soy sauce, and Marmite are my fail-safe ingredients for awesome gravy. They add great umami taste as well as saltiness, and they give the gravy a beautiful rich, dark colour. Marmite weirds some people out, but it is killer in gravy.

Remove the gravy from the heat. To make it a bit creamy (totally optional), stir in:

2 tbsp sour cream or cream cheese

Mix into the gravy:

the roasted vegetables (straight from the oven, preferably)

3 – 4 cups of chopped cooked turkey

Pour the whole thing into a 9-inch pie plate.

Top it with the chilled biscuits and brush them with an egg wash (1 egg mixed with 1 tbsp water).

Bake the pie at 425˚F for 20-25 minutes, until the gravy is bubbling and the biscuits are golden brown and puffed. Let it cool for just a few minutes before serving.

Comfort in Pastry Form

After almost two weeks of time off over the holidays, it was really hard to contemplate going back to work, so on my last day off, to make myself feel better about it, I made the most comforting thing I could think of: apple pie. My mum had given me a bag of apples from her friend’s tree when I visited my parents over Christmas, and while some of them were past their prime and some of them were slightly splotchy, the majority of them were just right for a pie.

This recipe is the one that introduced me to my no-fail, super-easy pie crust, so it has a special place in my heart. It’s from Canadian Living, and I always feel “extra Canadian” when I use one of their recipes – I know, weird, but it’s a good feeling and that’s what I was going for. While there is really nothing exciting or different about apple pie in general nor this one in particular, this iteration happens to be my favorite. In fact, it might be my favorite because it’s not exciting or different – it’s familiar and homey, which is why I wanted to share it. I like the methodical nature of making this pie: stirring together the pie crust, peeling the apples, fluting the edge, and knowing exactly what comes next. There is comfort in that routine. And using apples grown by a friend of my mother rather than anonymous grocery store fruit made me feel even better. This was a feel good pie, and I hope makes you feel good, too. Now before I get any sappier, here’s how you make it!

My Favorite Apple Pie

Adapted from Canadian Living

Flaky Pastry

In a large bowl, cream together:

1/2 cup unsalted butter, softened

1/2 cup less 1 tbsp shortening

(or any combination of the above (or all butter), totaling 1 cup less 1 tbsp)

Add:

2 1/4 cups all purpose flour

3/4 tsp salt

Stir into the butter mixture until ragged. The idea is to smear the flour into the butter – this will help make it flaky – but don’t over-mix.

Pour in:

1/2 cup ice cold water

Stir until a loose dough forms. Turn the dough into a floured surface, divide in half, and form each half into a flat circle. Wrap in plastic and chill for at least 1 hour or until firm.

Preheat the oven to 425˚F. On a floured surface, roll out one of the chilled pastry discs to fit a 9″ pie plate. Press the pastry into the pie plate.

Filling

Peel and slice enough apples to make 8 cups (I used about 17 smallish apples). In a bowl, combine the apples with:

2 tbsp lemon juice

1/2 cup brown sugar

3 tbsp all purpose flour

1 tsp cinnamon

1/8 tsp allspice (optional)

Pour the apple mixture into the pastry-lined pie plate, then moisten the edge of the pastry. Roll out the second piece of pastry, drape it over the apples, and press it around the edges to seal. Trim the pastry, leaving about 3/4 inch overhang, then fold the overhang underneath itself and flute the edge. Brush the pastry with egg wash (1 egg yolk mixed with 1 tbsp water), sprinkle it with coarse sugar, and cut a few steam vents. Bake in the bottom third of the 425˚F oven for 15 minutes, then reduce the heat to 350˚F and bake for 40 minutes longer, or until the pastry is deep golden and the filling is bubbling. Cool on a rack. If you want the pie to slice cleanly, wait until it is completely cool before cutting. If you’re not afraid of a little pie juice, cut yourself a slice while it’s still a bit warm and eat it with vanilla ice cream. So comforting!

Delicious Ribs and Slow Cooker Fail

This morning I put ribs in the slow cooker to do their thing all day and be delicious and fall-off-the-bone ready for dinner. This is something I have done many, many times before with consistently awesome results, so imagine my surprise when I got home from work, lifted the lid to check on the ribs, and discovered that they were well on their way to becoming burnt. Luckily it was just the sauce that was turning black, so I put the ribs in a covered baking dish with some more sauce, stuck them in the oven to finish, and they turned out just fine.

Normally, the slow cooker works perfectly for these ribs, so I don’t know what the problem was. I think it might be time for a new slow cooker, because it was on low and the lid was on properly and everything. Anyway. The ketchup can be substituted for any tomato product (perhaps with an added dash of cider vinegar) – once when I was out of ketchup, I subbed in some cherry tomatoes from the overabundance growing on the porch, which turned out to be incredibly delicious. And if you don’t have a slow cooker (or just don’t trust yours anymore!), these can also be done in a covered dish in the oven….
