Cocoa Cardamom Crunch

April 4, 2015 By Korena in the Kitchen 4 Comments

Cocoa Cardamom Crunch | Korena in the KitchenMy daily breakfast is Greek yogurt with fruit and homemade granola, and I look forward to it every morning. However, my last few batches of granola have been a little lackluster, so I was pretty excited to discover a new kind of yogurt-appropriate topping called “nutmeg crunch“, a combination of oats, almonds, honey, coconut oil, and a hefty dose of nutmeg blitzed in the food processor, the resulting crumbles of which are spread on a cookie sheet and baked until toasty and crisp. These little oatmeal clusters are totally delicious, not to mention incredibly addicting. One recipe makes enough for a week’s worth of breakfasts, but my first batch only lasted about three days because I was eating the stuff by the handful. I immediately began thinking of all the variations one could make to the recipe: vanilla bean and almond, cinnamon and pecan, cocoa and cardamom…

Christmas Baking 2013: Chocolate Cardamom Orange Ribbon Cookies

December 30, 2013 By Korena in the Kitchen 4 Comments

Every year I spend several hours composing a list of the Christmas cookies I will bake, and inevitably once it’s “complete”, I come across a new recipe that I have to try, and the list gets edited once again. This was one such recipe. I love the orange chocolate combination as well as the chocolate cardamom combination, and these cookies contain both. Plus they are quite pretty with their stripes of different coloured dough. The flavours are subtle, but they have a great crisp texture and as I mentioned, they look really great. Definitely a welcome addition to this year’s Christmas cookie tins.

Daring Bakers: Mawa Cake

August 27, 2013 By Korena in the Kitchen 18 Comments

IMG_5214Aparna of My Diverse Kitchen was our August 2013 Daring Bakers’ hostess and she challenged us to make some amazing regional Indian desserts. The Mawa Cake, the Bolinhas de Coco cookies and the Masala cookies – beautifully spiced and delicious! 🙂

I love Indian food but I’ve never done any Indian baking, so this was an eye-opening challenge in that respect. Aparna set us a beautiful challenge to make a cake (the Mawa cake) and one of two kinds of cookies/biscuits. Never one to turn down an opportunity for cake, I made it early in the month… and then ran out of time for the second half of the challenge, ie: the cookies. 🙁

Mango Lassi with Cardamom and Honey

August 21, 2013 By Korena in the Kitchen 8 Comments

IMG_4504Mangoes have been absolutely amazing this summer. I keep buying them with the intent to make chutney or something similar, but I never get further than eating them straight or throwing them in the blender to make a mango lassi – essentially a thick yogurt smoothie, it is one of my favorite discoveries this summer.

Chocolate Hot Cross Buns

April 7, 2012 By Korena in the Kitchen 7 Comments

Once again, the start of spring and the approach of Easter mean that it’s hot cross bun season. I had pretty good success last year making hot cross buns, so I gave them another try – but this time I added chocolate, because almost anything is better when you add chocolate. Prior to this, I had never actually had a chocolate hot cross bun, but I have seen them in bakeries and heard wonderful things about them (apparently they are very popular in Australia). There doesn’t seem to be a huge amount of recipes available on the internet, so I decided to come up with my own. I added cocoa powder and chocolate chips (plus dried cherries and apricots) to my existing hot cross bun recipe, along with a healthy dose of cinnamon and cardamom, with which I have recently become enamoured and which happens to go very well with chocolate. And for the cross on top, white chocolate….
