Cranberry Apple Cinnamon Danish Swirls

November 26, 2018 By Korena in the Kitchen 3 Comments

When Dale Carnegie wrote his famous self-help book, “How to Win Friends and Influence People“, he listed six ways to get people to like you. I’m here to present you with a seventh way: make these cranberry apple cinnamon danishes and share them with whomever you are hoping to befriend.

Stella Parks’ Spiced Vanilla Hot Cross Buns

March 31, 2018 By Korena in the Kitchen Leave a Comment

Guys, I’m having a serious moment with Stella Parks, aka BraveTart. By which I mean, I want to bake all her stuff. Luckily, “her stuff” includes a killer recipe for hot cross buns, so I’m back this year (after a brief hiatus last year) with HCB take seven on the blog. In the past I’ve dabbled in various combinations of chocolate, sourdough, cider, porter, honey, and tea infused HCBs, and this year’s version comes with a hit of vanilla and the unexpected addition of Greek yogurt. One of the things I love best about Parks’ recipes is the way she explains the science behind certain ingredients. In this case, the Greek yogurt adds softness and moisture to the dough, and its acidity also helps with gluten development (and now I understand what “The Lemon Juice Secret” is from the back of the Rogers Flour bag!).

Franzbrötchen {Cinnamon Sugar Buns}

Franzbrötchen {Cinnamon Sugar Buns} | Korena in the Kitchen

Imagine if a cinnamon bun and a croissant had a baby, only the baby was smarter, taller, better looking, and more popular than both its parents. This baby would be the Franzbrötchen, a cinnamon-sugar filled flaky pastry of German persuasion that is right up there among the best things I’ve ever baked.

Orange Rosemary Pecan Zucchini Bread

August 25, 2015 By Korena in the Kitchen 4 Comments

Orange Rosemary Pecan Zucchini Bread with Orange-Honey Butter | Korena in the Kitchen

Unlike most gardens at this time of year, my garden is NOT overflowing with zucchini. All summer I’ve had two zucchini plants busily putting out flowers, but zucchini have both male and female flowers which need to be cross-pollinated in order for the little baby squash at the base of the female flower to grow, and my plants just couldn’t seem to coordinate their schedules to have both kinds of flower blooming at the same time. My potential zukes never got past this stage before shriveling up and dying (very depressing). And now the plants are succumbing to dusty mildew, so my homegrown zucchini dreams are over for this summer. Sadness.

Honeyed Hot Cross Buns

April 14, 2015 By Korena in the Kitchen 6 Comments

Honeyed Hot Cross Buns | Korena in the KitchenI know, I know, Easter was so two weeks ago. But seeing as I’ve posted about hot cross buns every year since I started this blog, I couldn’t NOT post about this year’s version. Just bookmark this recipe for next year and call it advance preparation.  ; )

Brunch for Forty

March 14, 2015 By Korena in the Kitchen 13 Comments

Brunch for Forty | Korena in the KitchenLast weekend I had the opportunity to cater a day-after-the-wedding brunch for a friend’s family. I love this kind of thing because not only do I get to bake and cook to my heart’s content, but I also get to do a lot of figuring out: coming up with a menu, researching recipes, scaling them up and down, and writing out list after list. Calculating exactly how many eggs I will need to make a dozen quiche plus four dozen cinnamon brioche buns is the kind of math I can get behind. I found a great resource in Ellen’s Kitchen for estimating quantities for large gatherings, although it doesn’t say much for my math skills when my estimates, in most cases, ended up being about twice what they should have been! But it’s better to have more food than not enough, right?

Whole Wheat Sourdough Croissants

October 21, 2014 By Korena in the Kitchen 38 Comments

Whole Wheat Sourdough Croissants | Korena in the KitchenAlmost a year ago exactly, David Lebovitz posted a recipe for whole wheat croissants on his blog. I have been meaning to make them ever since, and I finally found an excuse to do it for this month’s Sourdough Surprises project. I haven’t baked with the group for a few months and my poor, poor starter has definitely been suffering because of it: when I pulled it out of the fridge at the beginning of the month, knowing that I’d need to revive it after not feeding it for a very long time, the top had actually turned grey. My heart sank because I thought I’d killed for real, but upon closer inspection it smelled fine and I was able to scrape off the grey layer (which was just discolouration and not anything more sinister). A few aggressive discards and feeds later, it was back to its happy, bubbling self. Moral of the story: despite appearances, a well-established sourdough starter is actually really really hard to kill!

Blackberry Cinnamon Buns

October 2, 2014 By Korena in the Kitchen 7 Comments

Blackberry Cinnamon Buns | Korena in the Kitchen

Several weeks ago we were invited to Nate’s aunt’s house for a “bun throw”, which, as it turns out, has nothing to do with actually throwing buns – it’s more of a family brunch. Nevertheless, I figured buns were appropriate, so I made cinnamon buns. But not just regular cinnamon buns: I added blackberries.

Happy Canada Day!

July 1, 2014 By Korena in the Kitchen 3 Comments

Candied Salmon Salad Rolls | Korena in the KitchenCanada turns 147 years old today! If you are looking for a way to celebrate, may I suggest you make these salad rolls with candied salmon, which I posted about over on the SeaChange Seafoods blog. They are perfect to take to a picnic or barbeque, and can stand as either an appetizer or a side dish or a full meal, which is how Nate and I usually eat them.

And while you’re here, may I also suggest that you make this cherry almond Dutch baby: it is TO DIE FOR. I made it for breakfast a few days ago and I’m still thinking about it. It tastes like a cross between a cherry clafoutis and a cherry-almond danish, ie: really, really amazing. The only changes I made were to add a bit of vanilla bean paste to the batter and to bake it in a slightly smaller (nine inch) cast iron skillet. So good!

Sourdough Cider Hot Cross Buns with Chocolate Chunks

April 20, 2014 By Korena in the Kitchen 19 Comments

Sourdough Cider Hot Cross Buns with Chocolate Chunks | Korena in the KitchenAs I pointed out last month, Christmas cookies and hot cross buns are about the only seasonal things I manage to post about with any punctuality… and seeing as today is Easter Sunday, hot cross buns are most definitely on the menu. This month’s Sourdough Surprises project was sourdough hot cross buns, which I also tackled last year with a chocolate porter version. I decided to go a similar route this time around, adapting a recipe that used hard apple cider to make an overnight sourdough levain. And, because for me, Easter is all about chocolate, I added a generous amount of dark chocolate chunks to the dough.
