A Birthday Cake for Max

My son, Maxwell, turned 3 months old last week. When the first contractions began the day before he was born, I started to make him a cake to distract myself from early labour: the famous Milk Bar funfetti Birthday Cake, a “birthday” cake in a very literal sense. I managed to bake the actual cake before things got too intense to continue and I had to put it unfinished in the freezer to deal with at some point in the future. A little over twenty-four hours later, I had a baby in my arms. Six weeks after that I had my feet under me enough to finish assembling the cake. And now, another eight weeks later, I’m finally getting around to posting about it – because newborns and postpartum and learning to breastfeed are NO JOKE!

Pistachio Petit Four Cake

Every year I carefully plan what kind of birthday cake I’m going to make myself, and this year I was imagining some kind of over-the-top creation with chocolate and peanut butter. But my chocolate cake craving was satisfied when I made a Devil’s Food Cake with Marshmallow Frosting (OMG) for a co-worker’s last day potluck, and then I changed tacks completely when I came across this little pistachio layer cake beauty, boasting not only pistachio sponge but also apricot jam, thin ribbons of marzipan, chocolate ganache, and flowers. And as a cake project lover and general fussy-pastry enthusiast, it seemed like the perfect birthday present to myself.

Grandpa’s 100th Birthday Cake {Chocolate Mocha Layer Cake with Vanilla Buttercream}

My Grandpa turned 100 in December – an occasion that deserves a celebratory cake if there ever was one! I asked him what his favourite kind of cake was, and when he answered “fruitcake”, I had a worrying flashback to the last fruitcake I encountered – which happened to be the cake at his own wedding 11 years ago when he married his sweetheart Daphne, where it took three people plus a cleaver and an axe to cut through the royal icing on the outside.

Lemon Crêpe Cake

Lemon Crêpe Cake | Korena in the KitchenSo… it’s been a while. I wish I could say I’ve been too busy vacationing or holidaying to post anything, but I’ve just been working and unmotivated to blog. I actually made this cake for my birthday (32!) back in the first week of July, and it’s taken me this long to get it up here. We’ve had an incredibly hot and dry summer so far here in BC, and as a result there are hundreds of wildfires burning throughout the province. The day I made this cake, we awoke to a hazy sky and blood red sun casting an eerie, apocalyptic, Martian filter over the world, thanks to the smoke from all those fires settling over Vancouver Island and the Lower Mainland. It was the strangest light for taking photos, so please excuse if the pictures look a little weird.

This year for his birthday, Nate requested a creamsicle cheesecake. I’ll admit that the creamsicle combination of creamy vanilla ice cream with orange isn’t usually my first choice – especially when there is creamy vanilla ice cream with chocolate to be had instead – but since it was his birthday, I acquiesced. Compared to the chocolate caramel bacon insanity cake from his birthday a few years ago, it was a relatively simple request.

Caramel Cake with Raspberries and Cream

I turned thirty this past Sunday. Thirty. I know that age is just a number and I’m still plenty young, but it sounds a lot older than twenty-nine, somehow. It was a milestone, anyway, so there had to be an appropriate cake. As with every birthday cake I make, there was some agonizing over what kind it should be – but only a little. I already had it narrowed down between a crêpe cake or a caramel cake, and the caramel cake won. (But the crêpe cake is still on the list, because WOW.)

When I asked Nate a few weeks ago what kind of cake he wanted for his birthday, he gave me free reign to make whatever I felt like. I was all set to make a tres leches cake, but when I told him this the day before he didn’t seem as enthusiastic about it as I was. So I asked him exactly what he wanted, and he gave me these particulars: chocolate, maybe some bacon, perhaps some caramel. Basically, “It should be… insane.”

A Non-Traditional Black Forest Torte

Black Forest TorteA good friend of ours celebrated a birthday last weekend, and after some not-so-subtle inquiring, Nate and I discerned that his favorite cake is black forest. Which made me happy because I have been looking for an excuse to make this fantastic version with Grand Marnier soaked cherries, espresso whipped cream, and chocolate ganache. It may not be the most photogenic (or maybe it’s just because I was photographing at night, which is no fun) but it is SERIOUSLY good.

Last weekend we went to Nate’s parents’ house for lunch to mark his mum’s and (now) 4-year-old nephew’s birthdays. Of course, two birthdays call for two cakes. Strawberries & Cream Birthday Cake

A birthday definitely deserves a cake, so for my 29th birthday this weekend, I made myself one. Some people might think that it’s sad to make your own birthday cake, but quite honestly it is one of the best birthday presents I could get. Not only to I get to bake all day (which I love, obviously!), but I get to make the cake exactly the way I want it, AND I get to eat it. Totally a win-win situation for me. Because I’m a planner (at least when it comes to cakes, anyway), I’ve been thinking about my birthday cake for a while. At first I really wanted to make this Mexican hot chocolate-inspired cake, but then I came across Julia Child’s French strawberry cake, which seemed more seasonally appropriate. I also had my eye on this hazelnut cake, so I added some hazelnuts to Julia’s cake. And then I really wanted to make Swiss meringue buttercream, and this custard buttercream frosting caught my eye. So much for following one recipe as written, right? This time, anyway, it seems to have worked out and this cake was awesome!…
