Pineapple Coconut Banana Bread

I have a banana bread weakness. Whenever I see a new and interesting recipe, especially one that has been raved about, I can’t help myself: I have to make it. I stockpile over-ripe, frozen bananas in my freezer (I think that’s a form of enabling) just so that I can bake banana bread whenever the mood strikes me, as it did the moment I read about this sugar-topped coconut version.

I had most of a can of pineapple in the fridge and thought it would be a good addition to the loaf. It was. And while the coconut and pineapple add texture and sweetness, the sugar on top adds crunch, and the dark rum adds a bit of luxury, my favorite part of this banana bread is the hint of nutmeg in the batter. Somehow it brings all the flavours together and makes them sing. I know this sounds awfully flowery for a loaf of banana bread, but MAN is it ever good!…

Strawberry Cheesecake Banana Bread

It is finally strawberry season here, and by that I mean that there are local strawberries in the stores. They are a bit more expensive than the ones trucked up from California (which seems so totally backwards!) but they taste amazing because they are so perfectly ripe and fresh.

I knew I wanted to make something special with these berries but I couldn’t decide what until I remembered the strawberry banana bread I’d seen on Joy the Baker a while ago. I wanted to jazz it up even more so I added a cream cheese swirl. The result is an incredibly moist, decadent, not-to-sweet bread with a pleasant strawberry flavour and cheesecake-y tang. The banana is not overpowering at all and mostly just contributes sweetness, and the hint of cinnamon in the batter goes really well with the strawberries….

Chocolate Hazelnut Banana Bread

This Chocolate Hazelnut Banana Bread is sure to derail your New Year’s resolutions to eat less sugar and/or chocolate. I have stopped trying to make those kinds of resolutions for myself, because they never last long and I just straight up love sugar and chocolate (luckily I also love exercise, so it balances out). The collection of over-ripe frozen bananas in my freezer was approaching epic proportions, so I figured it was time for a batch of the best banana bread in the entire world ever. I’m also trying to find ways to use up the crazy amount of Nutella that I got for Christmas that doesn’t involve eating it straight out of the jar (at least I use a spoon), and the logical progression was to combine the two. …

The Best Banana Bread in the Entire World. Ever.

You may suspect that I am employing hyperbole in the title of this post. My friends, you are incorrect! This actually IS the best banana bread in the entire world. Ever. This recipe comes to me via my friend Lynette’s mum, Elaine, and it has attained legendary fame by all who have tried it as being absolutely fan-freakin’-tastically delicious. This banana bread comes out light and fluffy, sweet and moist, and is likely to disappear in a shorter amount of time than it took you to bake it. The first time I tasted it, Elaine had made a double batch, and it was absolute torture smelling it as it baked. Lynette and I then devoured an entire loaf, hot and steaming from the oven.

I have made this recipe a billion times, and I’ve played around it it a bit, so that my typical banana bread comes out slightly different from Elaine’s original recipe. I add an extra banana and some vanilla, and to convince myself that it’s a little bit good for me, I usually substitute in some whole wheat flour. Then I also usually add a bunch of chopped chocolate or chocolate chips, which effectively cancels out any health benefits the whole wheat flour might add… But whatever. It tastes divine….
