Daring Bakers: Pastel de Tres Leches

Inma of la Galletika was our Sept. 2013 Daring Bakers’ hostess and WOW did she bring us something decadent and delicious! Pastel de Tres Leches or Three Milk Cake, creamy yet airy, super moist but not soggy… just plain delish!

The first time I made a pastel de tres leches, or “three milks cake”, I honestly thought there was a mistake in the recipe when I read the part instructing me to pour close to three cups of milk over the beautiful sponge cake I had just taken out of the oven. But since it was a recipe from my trusted friend Martha, I took a deep breath and poured that milk over that cake… and was amazed to see it all soak in within minutes, resulting in one of the moistest, most delicious cakes I’d ever had. Consequently, I can’t believe it’s taken me this long to make another one!

Sugar & Spice Almond Danish Crescents

The Canadian Food Experience Project: Making Pie

So, I’m a few days late for this month’s Canadian Food Experience Project, the theme of which is “My Most Cherished Canadian Food Recipe”, but better late than never, right? I’ve already written about my scone recipe, which is probably my most cherished one, but making pie – pastry in particular – is a close second. Attempted Baguettes

IMG_5316Oh, hi. I’ve been kind of absent in these parts this week – I’m back at work full-time (did I mention I had four months off over the summer? Yeah, tough life!) and being out of the house for almost 10 hours a day while still trying to indulge in my blogging habit is taking some getting used to (I know, I know, suck it up Korena!). I just haven’t found the time or energy to finish a post, even though I have a backlog of recipes waiting to be posted. Oh well. First world problems, right?

Anyway, onto the topic of this post: the baguette. A seemingly simple cylinder of dough, tapered at both ends, baked to a shatteringly crisp, crusty perfection. However, having the inquiring mind that I do, I researched the heck out of just how to create said seemingly simple cylinder, and in the process, psyched myself out a bit (kind of like I did with macarons, another French creation). It wasn’t until I came across Richard Bertinet’s shaping instructions that I felt comfortable enough to try it out, and thankfully, it was actually much easier than I imagined.

Daring Bakers: Mawa Cake

IMG_5214Aparna of My Diverse Kitchen was our August 2013 Daring Bakers’ hostess and she challenged us to make some amazing regional Indian desserts. The Mawa Cake, the Bolinhas de Coco cookies and the Masala cookies – beautifully spiced and delicious! 🙂

I love Indian food but I’ve never done any Indian baking, so this was an eye-opening challenge in that respect. Aparna set us a beautiful challenge to make a cake (the Mawa cake) and one of two kinds of cookies/biscuits. Never one to turn down an opportunity for cake, I made it early in the month… and then ran out of time for the second half of the challenge, ie: the cookies. 🙁

The “Why Bother” Cake

IMG_4815Since I was about 7 or 8, my Mum has had food sensitivities to wheat and dairy. This was over 20 years ago, before being gluten-free and drinking soy or almond milk were “mainstream” like they are today, and food choices back then for pretty much everything were extremely limited. At some point, we started to refer to anything wheat-free and dairy-free as a “why bother?” because most often, without both wheat and dairy, whatever you were eating was barely worth it – especially when it came to dessert.

Blackberry Lime Coconut Macaroon Bars

IMG_5064Blackberries are a sure sign of summer to me. I usually go berry picking towards the end of August, but all the sunny hot weather we had in July means that the earliest berries are ripe, so over the weekend I was out with my bucket, lurking in the neighbourhood ditches, picking blackberries. The berries right now are still quite small, with a good tart pucker to go with their sweetness, and if the unripe berries on the bushes are anything to go by, it’s going to be a great blackberry year.

An Afternoon at Teafarm (plus a chocolate cake!)

teafarm7The Canadian Food Experience Project began June 7, 2013. As we share our collective stories through our regional food experiences, we hope to bring global clarity to our Canadian culinary identity. The theme for this month’s Canadian Food Experience Project is “A Regional Canadian Food Hero”, which can be broadly defined as anyone involved in food growing, production, education, activism, or the like, working to preserve local foods, skills, traditions, or to define the local terroir.

{For some reason, I had a hard time writing this post – sometimes it’s difficult to put an experience in words. I wrote several drafts, one of which accidentally got published a few days ago, so apologies to anyone who got a bunk notification in their reader or email. This is the real post!}

The Cowichan Valley is home to many farms and artisanal food producers, one of which is Teafarm, located just north of Duncan in the Westholme area. My friends Lynette, Ang, and I visited on a beautiful Sunday in July for their “tea + sweet pairings” menu, and ended up having a pretty wonderful afternoon, sipping tea, enjoying chocolate goodies, and basking in the farm’s pastoral bliss. Believe me when I say I am not at all exaggerating about the bliss part.

Toffee Coffee Cookies

IMG_4583Pinterest is a dangerous place. I was browsing through some of the hundreds of recipes I have pinned (I know some people also pin, like, fashion or crafts or home decor or whatever, but 98% of my pins are food) and these toffee espresso cookies just spoke to me. I’m not a regular coffee drinker, but I can’t say no to a coffee-infused baked good, especially when it is talking so loudly (must be the caffeine).
