Raspberry Almond Shortbread Sandwich Cookies

A few years ago I bought a humble little sandwich cookie at the cafe in the building where I used to
work, and its almondy-raspberry-crumbly-shortbreadiness has been in my head ever since. I meant to finally re-create this cookie and post it in time for Valentine’s Day (hence the hearts), but, well, it’s the end of March now, so you can see how that went. But these are definitely better late than never, and like most good cookies, are much more than the seemingly simple sum of their parts: two almond shortbread cookies perfumed with lemon zest, sandwiched with tart yet sweet raspberry jam, drizzled with creamy white chocolate.

Rhubarb and Marzipan Pie

According to Instagram, it’s been rhubarb season since about January, judging by all the gorgeous rhubarb baked goods that have been showing up in my feed since then. I guess spring comes a lot later here in the Far North (ha) because even now that it’s mid-May, the rhubarb in my garden is not quite ready to harvest yet. But it has finally been showing up in the grocery store, and when I snapped some up a few weekends ago I knew exactly what to do with it: I had just seen a delicious looking rhubarb and marzipan cake, and my first thought was, “That would make a good pie.”

I’ve been eagerly anticipating Luisa Weiss‘ new book, Classic German Baking, ever since she first started sharing her adventures in recipe development about a year ago. I have yet to get my hands on the actual book, but since its release, several recipes have popped up online, including one for a completely gorgeous apple-marzipan cake, which is described as “epic“. In the fall, I’m a sucker for anything apple, and almonds are quickly becoming my favourite flavour for almost everything, so this cake was immediately added to my weekend baking list.

After making a chocolate-hazelnut sourdough biscotti a few years ago, I concluded that sourdough biscotti was just a novelty and not actually a practical way to make biscotti or use sourdough. So I’m not sure what it says about me when I decided to participate in this month’s Sourdough Surprises project, which was – you guessed it – sourdough biscotti, AND decided to use the same recipe as the base. I guess maybe it says I’m drawn to novelty and prone to impracticality. But whatever: I have biscotti.

Harvest Apple and Almond Tart

As usual, I’m a few days late with this month’s Canadian Food Experience Project post… but it’s because I wanted to get this recipe right before sharing it. This month, Valerie has asked us to talk about the Canadian harvest and what it means in our lives. For me, the harvest means apples. For as long as I can remember, autumn has brought with it falling leaves and a large box of apples sitting in one corner of the kitchen, perfuming the house with their sweet-tart scent, until either my Mum finally got around to making apple sauce or apple crisps, or I baked them into pies. When I was young, the apples came from my grandparents’ trees, and in more recent years they came from friends of my parents. This year, I scored some truly gigantic Bramley apples from a co-worker’s trees.

Sugar & Spice Almond Danish Crescents

IMG_5432I’ve been holding out on you. I made these danishes back in full summer, but with their warm notes of spice and orange, they seemed too cozy and autumnal to share just then. But now, since yesterday was the Fall Equinox and Nate has already had to go up on the roof to clear off the maple leaves (that’s why it’s called “fall”, right?), it’s danish time!
