Kate’s Rhubarb Upside Down Cake

May 12, 2014 By Korena in the Kitchen 2 Comments

Kate's Rhubarb Upside Down Cake | Korena in the Kitchen

The Canadian Food Experience Project began June 7, 2013. As we share our collective stories through our regional food experiences, we hope to bring global clarity to our Canadian culinary identity. Visit Valerie’s blog, A Canadian Foodie, on the 15th for a round-up of this month’s posts.

May’s theme for the Canadian Food Experience Project is “The Canadian Garden”, which frankly seems like a bit of a joke at this time of the year. Even living in one of the most temperate places in the country (“Cowichan” means “The Warm Land” in the local First Nations language), my garden is mostly bare dirt at the moment… save for my rhubarb plant.

Petite Strawberry Frangipane Tart

Petite Strawberry Frangipane Tart | Korena in the Kitchen

While local strawberries are still at least a month off, I admit to thoroughly enjoying the juicy red California-grown gems that have been showing up at the green grocer lately. I can’t help myself – this winter felt SO LONG and strawberries are like the breath of fresh air and ray of sunlight that I’m craving right now. And while they might not be local, they are at least in season, and for that I am grateful!

Pear Ginger Muffins with Hazelnuts and Milk Chocolate

January 4, 2014 By Korena in the Kitchen 6 Comments

Happy New Year!

For my first post of 2014, I bring you muffins. Muffins fit in with all those well-intentioned New Year’s resolutions about eating better and being frugal – these muffins in particular came about from the need to use up three very tired-looking pears, which were made into an extremely delicious pear ginger sauce to put in the muffin batter. However, underneath their nubbly, virtuous-looking brown exterior, they contain a little bit of sin: chunks of hazelnut milk chocolate, a large bar of which I “won” in a present exchange game over the holidays. Truth be told, these muffins are more sinful than not – a muffin like this is basically just a rustic cupcake – but now that the Christmas tree is put away and it’s back to reality (ie: work), they helped ease the sting a little.

Harvest Apple and Almond Tart

November 11, 2013 By Korena in the Kitchen 11 Comments

The Canadian Food Experience Project began June 7, 2013. As we share our collective stories through our regional food experiences, we hope to bring global clarity to our Canadian culinary identity. Visit Valerie’s blog, A Canadian Foodie, on the 15th for a round-up of this month’s posts.

As usual, I’m a few days late with this month’s Canadian Food Experience Project post… but it’s because I wanted to get this recipe right before sharing it. This month, Valerie has asked us to talk about the Canadian harvest and what it means in our lives. For me, the harvest means apples. For as long as I can remember, autumn has brought with it falling leaves and a large box of apples sitting in one corner of the kitchen, perfuming the house with their sweet-tart scent, until either my Mum finally got around to making apple sauce or apple crisps, or I baked them into pies. When I was young, the apples came from my grandparents’ trees, and in more recent years they came from friends of my parents. This year, I scored some truly gigantic Bramley apples from a co-worker’s trees.

Cranberry Orange White Chocolate {Sourdough} Loaf

October 21, 2013 By Korena in the Kitchen 40 Comments

I have become recently obsessed with The Great British Bake Off. As in, I spent most of Sunday watching episodes on the internet and searching through my cookbooks for the recipes that I would make if I was on the show. I know, get a hobby, right? (Wait, this is my hobby…) In the words of one Season 3 contestant whenever things got heated, oh my giddy aunt! I just love it – great baking combined with the typical British stiff upper lip and self-deprecating attitude, which is such a refreshing difference from the ridiculously ego-driven and sob-story-laden world of North American “reality” TV.

Daring Bakers: Pastel de Tres Leches

September 27, 2013 By Korena in the Kitchen 28 Comments

Inma of la Galletika was our Sept. 2013 Daring Bakers’ hostess and WOW did she bring us something decadent and delicious! Pastel de Tres Leches or Three Milk Cake, creamy yet airy, super moist but not soggy… just plain delish!

The first time I made a pastel de tres leches, or “three milks cake”, I honestly thought there was a mistake in the recipe when I read the part instructing me to pour close to three cups of milk over the beautiful sponge cake I had just taken out of the oven. But since it was a recipe from my trusted friend Martha, I took a deep breath and poured that milk over that cake… and was amazed to see it all soak in within minutes, resulting in one of the moistest, most delicious cakes I’d ever had. Consequently, I can’t believe it’s taken me this long to make another one!

The Canadian Food Experience Project: Making Pie

September 12, 2013 By Korena in the Kitchen 9 Comments

IMG_5741The Canadian Food Experience Project began June 7 2013. As we share our collective stories through our regional food experiences, we hope to bring global clarity to our Canadian culinary identity.

So, I’m a few days late for this month’s Canadian Food Experience Project, the theme of which is “My Most Cherished Canadian Food Recipe”, but better late than never, right? I’ve already written about my scone recipe, which is probably my most cherished one, but making pie – pastry in particular – is a close second. And when I’m thinking of Canadian recipes, there’s only one thing that comes to mind: Canadian Living.

Strawberry Balsamic Black Pepper Jam

September 1, 2013 By Korena in the Kitchen 4 Comments

IMG_5506Several weeks back, my Mum and I did an informal little “Cowichan Valley food tour”: we stopped by Teafarm, had lunch at Merridale Cider, bought spelt bread at True Grain Bread, enjoyed some Udder Guys ice cream, and did a wine tasting at Venturi-Schulze Vineyards. Of the six or seven other wineries that we drove past on our tour, we chose Venturi-Schulze because in addition to wine, they also make traditional balsamic vinegar.

Mango Lassi with Cardamom and Honey

August 21, 2013 By Korena in the Kitchen 8 Comments

IMG_4504Mangoes have been absolutely amazing this summer. I keep buying them with the intent to make chutney or something similar, but I never get further than eating them straight or throwing them in the blender to make a mango lassi – essentially a thick yogurt smoothie, it is one of my favorite discoveries this summer.

Blackberry Lime Coconut Macaroon Bars

August 15, 2013 By Korena in the Kitchen 13 Comments

IMG_5064Blackberries are a sure sign of summer to me. I usually go berry picking towards the end of August, but all the sunny hot weather we had in July means that the earliest berries are ripe, so over the weekend I was out with my bucket, lurking in the neighbourhood ditches, picking blackberries. The berries right now are still quite small, with a good tart pucker to go with their sweetness, and if the unripe berries on the bushes are anything to go by, it’s going to be a great blackberry year.
