Focaccia with Grapes & Rosemary {Schiacciata con L’uva}

Before we get caught up in the pumpkin spice madness that seems to take hold in the fall, let’s take a moment to appreciate the humble grape. Grapes are one of those fruits that I could usually take or leave, except for during the small window from the end of September to early October when Concord grapes are in season. So ten days ago when I saw some Coronation grapes – similar to Concords with with their dark blue-ish purple skin and tangy juice – at the grocery store, I snapped them up because 1) YUM and 2) I’ve been wanting to make schiacciata con l’uva, a Tuscan grape focaccia only made in September to coincide with the wine grape harvest, commonly made with Concord or similar grapes elsewhere in the world. And WOW – this stuff is amazing, the purple grape-iness mingled with rosemary, all sprinkled with coarse sugar and a little salt, not to mention the olive-oil infused focaccia bread base.

Chocolate-Covered Digestive Biscuits

You know when you go to the store to buy cookies, and come home with said cookies plus ingredients to make other cookies? Yeah, that’s how these chocolate-covered digestive biscuits came about (in line with my resolution to bake more cookies), but because they are made with nothing but regular pantry staples, the only ingredient I had to buy was the chocolate (which is normally a pantry staple for me, but I’d eaten it all).

Dorie’s Cocoa Linzer Cookies

I should really bake more cookies.

They are basically the perfect baked good: portioned as a single serving (not that it stops me from eating five in one sitting), endlessly variable in flavour, texture and shape, and they can be a simple or as complicated as you could possibly want. Yet other than the annual Christmas cookie madness and the occasional (and necessary) batch of chocolate chip, I don’t actually bake cookies very often. So I set out to remedy this, and my solution was these pretty little cocoa linzer cookies.

I woke up this first morning of 2017 to a pretty dusting of snow outside, which reminded me of these snowy white meringue-topped Zimtsterne cookies that I promised to post about before the New Year… oops. That strep throat I mentioned in my last post has hung on through two rounds of antibiotics and also morphed into laryngitis and a fun nighttime cough, rendering me unable to speak above a whisper and totally unmotivated to do anything but binge watch Gilmore Girls on Netflix. But sickness aside, these cookies are worth knowing about, so here they are!

Zimtsterne {Cinnamon Stars} | Korena in the Kitchen

Zimtsterne are a traditional German Christmas cookie made of meringue and ground nuts, usually almonds and sometimes hazelnuts, cut into star shapes and topped with more meringue. This particular recipe comes from Classic German Baking by Luisa Weiss (which I got for Christmas after having lusted after it for months!). The literal translation of Zimtsterne is “cinnamon stars”, but a more accurate one would be “finickiest cookies in the universe” because – well – they are: the dough is sticky and soft and challenging to work with, you have to cut out hundreds* of individual cookies and frost each of them by hand, and then you have to dry the cookies overnight before finally baking them while keeping the meringue on top from browning. I managed to come up with a few techniques to make things a little easier, which I will share below, because while these cookies are certainly a project, they are also worth it: nutty, chewy, not too sweet, lightly spiced, and easy to eat by the handful if you’re not careful. Christmas has come and gone, and I have managed to come down with a case of what might be strep throat… but in all honesty, I don’t mind that much because it gives me a legitimate excuse to lie on the couch and do nothing for a few days! The lead-up to Christmas, what with all the prepping and shopping and baking and traveling to visit family while still working full time, is absolutely exhausting, and I’m ready for a break, sick or not. But I wanted to tell you about these beautiful little Finnish Christmas tarts before the holiday is too long past, because they were extremely delicious and pretty fun to make, not to mention fun to say (in your best Swedish chef accent): “YO-lou-TOR-tou”.

Maple Stroopwafels

This post is two days late for International Waffle Day, and is not exactly your traditional Easter Sunday fodder (Happy Easter! Hot cross buns forthcoming!), however today is Daring Kitchen reveal day, and I’ve been waiting to share these babies for weeks. This month, the Daring Kitchen made stroopwafels, a sweet treat of Dutch origin in which a waffle cookie (“wafel”) is sandwiched together with buttery caramel syrup (“stroop”). Honestly, with a concept like that you can’t possibly go wrong, however if I didn’t already have such a soft spot for Dutch baked goods (see: plain and gevulde speculaas, peperkoek, and schichttorte), I might have let this challenge pass me by, because stroopwafels require the use of a rather specific cooking appliance that I do not own and didn’t really want to purchase: a waffle cookie iron or pizzelle iron. But, having been introduced to exactly how delicious stroopwafels are by my half-Dutch friend Lynette, I made the effort to take a ferry to Salt Spring Island to borrow a waffle cookie iron from her dad just so that I could make them myself!

Chocolate Peppermint Pinwheels

Chocolate Peppermint Pinwheels | Korena in the KitchenI took these photos at 8:30 pm on December 21, literally the darkest day of the year. It’s awfully difficult take take natural light photos when you never see your house in the daylight during the week. Blogging is such hard work!

I plunged into the Christmas cookie madness with both feet last week and spent every evening after work baking cookies. I think I was averaging two recipes a night in preparation for our annual pre-Christmas trek to Vancouver to see family, which coincided this year with my remarkable grandfather’s ninety-eighth (!!) birthday. These cookies in particular are a re-make of a childhood favourite that I remember asking my mum to make every year. Something about the spiraled layers of different coloured dough mixed with the flavour of peppermint and chocolate makes me feel all nostalgic.

Lemon Pistachio Biscotti

Lemon Pistachio Biscotti | Korena in the KitchenI had a jarring realization this past weekend that we were less than two weeks away from Christmas and that I hadn’t started any Christmas shopping – or worse, any Christmas baking. But then I remembered that I had actually baked and sent off holiday cookies for the Great Food Blogger Cookie Swap several weeks ago, so all was not lost. I participated in the Cookie Swap in 2013, then missed the sign-up deadline last year, so I was pretty excited to be part of it again this year. Participants pay a small entrance fee to raise money for the Cookies for Kids Cancer campaign, and then are matched up with three food bloggers to send cookies to. In return, you receive cookies from three other bloggers. These are the goodies that I got in the mail:

  • Vegan candy cane shortbread from Kacey of The Cookie Writer
  • Vegan snickerdoodles from Lisa of The Viet Vegan
  • Three different kinds of brown sugar cookies from Allison of The Bacon Eating Jewish Vegetarian

The Perfect Chocolate Chip Cookie

The Perfect Chocolate Chip Cookie | Korena in the KitchenI’ve been looking for the “perfect” chocolate chip cookie for about as long as I’ve been baking cookies. What I wanted was a fairly straight-forward method that didn’t involve a complete re-design of the chocolate chip cookie or an overnight rest in the fridge (because when I want chocolate chip cookies, I want them now, not tomorrow). I’ve tried the original Toll House recipe, dabbled in thin/crispy versions, large/cakey versions, changed baking times and temperatures, and  tried different flours, all of which promised to give the “perfect” cookie but just… didn’t.

Chocolate-Dipped Vanilla-Almond Sourdough Biscotti

After making a chocolate-hazelnut sourdough biscotti a few years ago, I concluded that sourdough biscotti was just a novelty and not actually a practical way to make biscotti or use sourdough. So I’m not sure what it says about me when I decided to participate in this month’s Sourdough Surprises project, which was – you guessed it – sourdough biscotti, AND decided to use the same recipe as the base. I guess maybe it says I’m drawn to novelty and prone to impracticality. But whatever: I have biscotti.
