Cranberry Orange White Chocolate {Sourdough} Loaf

October 21, 2013 By Korena in the Kitchen 40 Comments

I have become recently obsessed with The Great British Bake Off. As in, I spent most of Sunday watching episodes on the internet and searching through my cookbooks for the recipes that I would make if I was on the show. I know, get a hobby, right? (Wait, this is my hobby…) In the words of one Season 3 contestant whenever things got heated, oh my giddy aunt! I just love it – great baking combined with the typical British stiff upper lip and self-deprecating attitude, which is such a refreshing difference from the ridiculously ego-driven and sob-story-laden world of North American “reality” TV.

Sugar & Spice Almond Danish Crescents

September 23, 2013 By Korena in the Kitchen 11 Comments

IMG_5432I’ve been holding out on you. I made these danishes back in full summer, but with their warm notes of spice and orange, they seemed too cozy and autumnal to share just then. But now, since yesterday was the Fall Equinox and Nate has already had to go up on the roof to clear off the maple leaves (that’s why it’s called “fall”, right?), it’s danish time!

Overnight Sourdough Lemon Waffles

September 20, 2013 By Korena in the Kitchen 31 Comments

IMG_5644Since receiving a waffle maker from Santa-Nate last Christmas, I’ve experimented with a lot of waffle recipes. In particular, I’ve been looking for a really great overnight yeasted waffle recipe, one where you mix up an enriched yeast batter, let it rise and develop flavour overnight, then add eggs and baking soda (for extra leavening power and a light, airy texture) in the morning before cooking the waffles. I made one recipe that came with the waffle maker, which was pretty good, and twice I tried the famous recipe from Marion Cunningham’s Breakfast Book, via Smitten Kitchen, with middling success. The first time I made it I intended to serve waffles to our breakfast guests, but the batter seemed to have given up the ghost and died during its overnight rest*, so I tossed it and had to whip up a quick non-yeasted recipe instead. I tried it again a second time (because the recipe has such great reviews), this time tweaking a few things, for a much better result. But still not quite the overnight yeasted waffles of my dreams (although, thanks to those glowing reviews, I will probably try again to capture the magic).

Apricot Oat Bread

August 13, 2013 By Korena in the Kitchen 19 Comments

IMG_4972Once upon a time, my good friend and fellow tea partier Lynette was also my roommate. Being a tidy sort, one of her cardinal housekeeping rules was Everything Shall Have Its Own Place in The Fridge. This comes to mind frequently when surveying the inside of my own over-stuffed, disorganized and messy fridge, so last week I finally did something about it. During the subsequent clearing-out and re-organizing, I discovered two things: 1) I have neglected my poor sourdough starter at the back of the fridge for too long (luckily, nothing a good feeding couldn’t fix), and 2) I have a very large collection of half-empty jars of jam. These two things added up to one obvious solution: time to bake bread!

Daring Bakers: Doughnuts {Choose Your Own Challenge}

July 27, 2013 By Korena in the Kitchen 45 Comments

In a “celebration” of past Daring Baker and Daring Cook challenges, Lisa challenged all of us to search through the Daring Kitchen archives and pick any one we’d like! The REAL challenge was picking which delicious recipe(s) to try!

You hear that? The “REAL” challenge? Was it ever! For someone who becomes paralyzed with indecision when faced with life-altering choices such as which flavours to use in a cake (yeah, I’m that cool), the most challenging part about this month’s challenge was most definitely just choosing what to do. I was thinking croquembouche at first, or perhaps éclairs, or maybe something with ice cream, but eventually I decided on yeasted doughnuts. This was a decision fraught with anxiety though, let me tell you: I desperately wanted to make them (they’re on the list!) but I figured that deep-frying in the middle of July was kind of a silly move, and being that one batch of doughnuts makes over two dozen, I knew that I would have at least twenty-three more doughnuts than would ever be necessary. But I went ahead with it anyway 😉

Colossal Sourdough Cinnamon Buns

July 20, 2013 By Korena in the Kitchen 34 Comments

You know those absolutely huge cinnamon buns – the ones the size of your face – that you find at hotbeds of food culture like the mall food court? These are like those in size only – they taste a million times better (that’s a mathematical fact, I can assure you).

Sourdough English Pancakes with Lemon and Sugar

June 20, 2013 By Korena in the Kitchen 17 Comments

I’ve been making crêpes since I was a kid – they were one of the things along with cheese sauce (for macaroni) and chocolate sauce (for ice cream) that I learned to make without a recipe. My mum called them “leathery pancakes“, which is a pretty apt description, and I remember sometimes eating them with a squeeze of lemon and sprinkle of sugar. As a kid I think I preferred them with lots of butter and syrup (or much more sugar than lemon, anyway), but now that my taste buds have matured (ha) I absolutely love pretty much anything lemon flavoured (anything, that is, except for fake lemon. Yech.)

Strawberry Yogurt Muffins with Oat Crumble Topping

June 15, 2013 By Korena in the Kitchen 7 Comments

Strawberry Yogurt Muffins with Oat Crumble Topping | Korena in the KitchenLast weekend I spent a few days on Salt Spring Island, where I grew up, with a bunch of girlfriends. We stayed in a house on the ocean and basically just vegged out. There was a lot of talking and laughing (obviously, it was a house full of girls), a lot of eating and a little drinking (OK, more than a little), some suntanning (or in my case, burning), and there may or may not have been a very loud sing-a-long to terrible 90’s music (any Aqua fans out there?).

Leek and Bacon Quiche with Wholegrain Pastry

April 7, 2013 By Korena in the Kitchen 6 Comments

Leek & Bcaon Quiche with Whole Grain CrustNate and I had a pretty quiet Easter weekend at home, so instead of a big Easter Sunday dinner, I made a quiche with leek and bacon, a dish of scalloped potatoes, and a green salad (and dessert, of course – that post is coming!). I was lucky enough to have dinner with my parents on Salt Spring on Good Friday, which included not only the traditional baked ham but also a huge pile of fresh crab, caught by a family friend. It was amazing, but after all that food I was quite happy to keep it lighter for the rest of the weekend.

Whole Grain & Flax Buttermilk Pancakes

April 4, 2013 By Korena in the Kitchen 13 Comments

Whole Grain & Flax Buttermilk Pancakes

I’ve ordered buttermilk pancakes in restaurants many times and I’ve never really been able to taste the difference between them and regular pancakes. But once again I had a carton of buttermilk in the fridge leftover from a baking project, and buttermilk pancakes seemed like a good way to use it up. When my aunt came to visit at Thanksgiving, she brought me a copy of the Cook’s Illustrated 20th Anniversary All-Time Best Recipes, which contains a recipe for the Best Buttermilk Pancakes. This is where the Ultimate Chocolate Cupcakes recipe came from, and they certainly weren’t exaggerating about that one, so I figured that these pancakes would be pretty good.
